This is OK the day it's made, but absolutely spectacular after it's "aged" a bit. Next time I try it, I'll probably use just 3 oz. of chocolate. When I taste-tested, I ended up adding an extra (14.5 oz) can of diced tomatoes to balance out the chocolatey taste.

Easy Never Forgotten Guacamole

Holy toledo! My husband says this is better than good -- a keeper for sure. I stuck with the recipe as written (just doubled it), & it was terrific. Best new chicken recipe I've tried in as long as I can remember.

Blue Cranberry Sauce

Update: I subbed the juice from a fresh-squeezed orange for part of the liquid, plus the zest, & liked the result. My mother-in-law likes this so much , she is adamant about having it on the table every year -- & keeps all the left-overs, too! : ) Yummy! I also used frozen blueberries, & was pleased with the result. I love the blueberries so much, though, I'll probably add some extra next time I prepare this.

Chicken Scampi II

Yum, yum, yummy!!! I cut the butter & oil in half, sauteed onions & sweet red bell peppers with chicken tenderloins (plus a little chicken broth + flour to thicken), & it pleased all my picky eaters (the bell peppers were big enough for them to avoid -- yay -- more for me!!) Served it over brown rice.
