Eggplant Parmesan II
I'm not done cooking this yet, but I had just had to share how this turned out. I actually fried the Italian crumb battered eggplant before layering it in the casserole dish. I didn't have enough parmesean or mozarella cheeses to suffice, so I added some Colby..We'll see how that turns out. This I am sure will become one of my favorites!

Ham and Cheese Pasta Bake
This was an easy meal to prepare, I did make a few changes. I added more ham, and baked it twice as long. I also added more of a variety of cheeses on top, since that's all I had available. Family loved this recipe, didn't even have leftovers. Will make again!
