super easy! I have never made souffle before, and this was awesome! the only thing I changed was to half the sugar. my 8 year old nomally don't like carrot much, he ate half of the souffle (that's 1lb of carrot!!!) he stopped only because I made him save some of the rest of the family. thank you so much for such a great recipe!

not sure what went wrong, but I followed the recipe exactly, however these come out WAY to dry for my liking. I really gave it a good try, I baked 3 batches, the 1st for 10 min, the 2nd for 9 min, and the 3rd for 8, hopeing it will not be as dry. with the 8 min batch comes out looking under cooked, but still tasted dry! my kids usually can't stop eating fresh baked cookies, but they didn't even want 2nd. I had to forced them to do the taste test for me....
