Roasted Red Pepper Chicken
This is a fairly quick prep and cook time recipes, so I make this at least once a week with slight variations. I do not make the sauce. As for the filling I usually sauté a handful of spinach and tsp. of garlic in some olive oil and stuffed inside the breast along with the red pepper. Bread it and cook in pan on stove slightly coated with olive oil. Last week I added some caramelized onions and mozzarella cheese with the spinach and pepper. Makes a good cold sandwich the next day. (Disclaimer: I actually don't eat this as I am a vegetarian. I make it for my boyfriend. I ask him to rate all recipes I make. He gives it a 5 every time).

Liquor-Infused Chocolate Strawberries
Changed the injected liquor to suit the tastes of my guests. Instead of brandy, I injected rum into the strawberries, let them sit for about an hour to marinate, then dipped them into chocolate. Did not try to add liquor or cream to the chocolate mixture, just dipped them into chocolate that was melted over a simmering water. This recipe is very versatile as you can insert what ever liquor you prefer into the strawberries. Excellent idea! These are always requested at girls night. But as another reviewer mentioned, there are occasions of escaping streams of liquor while trying to inject strawberries.

White Chocolate Blueberry Cheesecake
With some alterations. Eliminated one egg. I used 3 eggs and 2 egg yolks. I cooked it according to the instructions, but after an hour it was still very loose. Raised the temp to 325 degrees and cooked for another 15 to 20 minutes (watch over it). When golden and appeared more firm, I lowered temp back to 275 for about 10 minutes to ensure filling was set. Followed cooling directions as written. For topping, I substituted the blueberries with strawberries and then drizzled melted white chocolate over top for presentation. Also did not use almonds in the crust. GOT RAVE REVIEWS FROM GUESTS. Definitely a crowd pleaser.
