Spinach Dip with Water Chestnuts

This is one of my favorites. I've had it at many potlucks. This was my first time making it. The first time I had lots of time and made sure the spinach was completely thawed and squeezed completely dry and it turned out perfect. The second time I was trying to hurry and didn't get all of the water out. The dip was a little runny. Definitely key to get as much water out of the spinach as possible. Other recipes say to heat the spinach to make it easier to drain. I haven't tried that but might next time.

Campbell's® Easy Chicken and Cheese Enchiladas

If you're looking for a traditional enchilada recipe this is NOT it. This is basically just chicken and rotel cheese dip wrapped in a tortilla. I was not impressed.

Mexican Pizza I

These were a lot more trouble than they were worth. I ended up wishing I had just made tacos and burritos like usual. The tortillas came out chewy and tough. I won't make this again.

Fettuccine with Sweet Pepper-Cayenne Sauce

Sooo delicious. I think next time I may add some broccoli for a little more variety. I love the heat. It's not too much but definitely sneaks up on you. I will make this a lot more.

Ashley's Chicken Katsu with Tonkatsu Sauce

This dish was AMAZING. My kids loved it, and they are tough critics. I took the advice of the other comments and used the ingredients for the sauce at my own discretion. I cut the worcestershire sauce way back and added lots of brown sugar. It was delish and I will definitely make this a regular meal.

Pumpkin Dessert

This is one of the best deserts I have ever had. Its rich but its soooo good. The yellow cake keeps the pumkin from being too overwhelming.

Easy and Elegant Pork Tenderloin

Good idea but needs some tweeking. My bread crumbs started burning before the center was completely done. I tried covering with foil but it was too far gone. Maybe on a diff temp it would do better?
