Beef Enchiladas
I made this tonight and thought it was excellent. I added some chilli powder and cumin to the meat to give it a bit more flavour. I also used whole wheat tortillas and my kids loved it!

Oatmeal Maple Syrup Muffins
I made these tonight and they turned out really well! I took the advice of using sour cream and soaking the oats and they turned out really moist and didn't fall. I added blueberries to the top. Yum!
