Cheater Pot Pie

Not fantastic, but good. I will only make again with alterations. The soup/sauce was kind of blah. I much prefer a more gravy-like sauce. Three stars mainly for ease and convenience.

Buttertart Squares

Half way through my first bar I was convinced I would never eat anything but these bars for the rest of my life. My husband was not exactly on the same page, but he seemed to enjoy them. No coconut or raisins were added, nor do I plan to try adding them in the future.

Zucchini Cornbread Casserole

I devoured this. Somewhere between quiche and cornbread, this has the potential for many more creative applications. I added some cream to the eggs and beat them with a handmixer to emphasize the quiche-like side of this dish. Then I simply mixed that with half flour, half cornmeal and some baking powder. I plan to try all sorts of veggies, meats, and cheeses in this base.

Creamy Souper Rice

Definitely needs extra liquid added. I was hoping it would be creamy, as the name suggests. It actually came out like regular rice, but with lots of yummy flavor. I'm still figuring the best alterations to make, but the basic idea is very good and tasty.

Hamburger Buns

Wow. I'm really impressed. I made the dough in my bread maker and had to let them rise a little longer than 20 minutes, more like 30, and baked exactly 15 and they were perfect. PERFECT! They were soft and fluffy and tasted wonderful. I was very apprehensive about using A/P flour and not bread, and only doing one rise, but I stuck too it and it was worth it. So easy and quick I'll definitely be using this recipe over and over.

Kentucky Banana Pudding

This was a winner at my house. I like the taste of homemade pudding much more than the instant kind so I was very glad to find this recipe that did NOT use a box of vanilla pudding. It had a rich creamy taste that was just right.

Creamy Blueberry Pie

When my husband saw me take out the sour cream to make this pie he almost choked. He was sure I was going to ruin it. But I'm a little embarassed to say that at this point, this pie is about 12 hours old and more than half way gone and that's just between the two of us. Yikes! It is that good!

Chicken Scampi II

I could have died happy the night I made this dish. I made it Olive Garden style by pounding the chicken flat then dredging it in flour before cooking, then I added thinly sliced red and green bell pepers and red onion. Dredging the chicken is an absolute necessity!!!! But make sure and shake off as much excess flour as possible. You'll be glad you add this step, especially if you've ever had the chicken scampi at Olive Garden.

Pot Stickers Traditional

I used to buy (at a very affordable price) bags of frozen pot stickers from Trader Joe's. I've had trouble finding them over the past couple years, and the ones I find in other stores are all at ridiculous prices. I'm so glad to have this recipe. Not only does it taste perfect, but I can control what I put in them and make them healthier if I so choose. We gorged ourselves on them the first night we made them. These will be perfect appetizers to premake and freeze for future parties. I can't wait to show them off.

Best Tuna Casserole

It really is the best. But I use a whole pound of peas and carrots and two cans of soup. I like to use a can of mushroom soup and a can of cream of chicken. Sometimes extra cheese, because extra cheese is always good. Otherwise its perfect.

Bread Pudding I

So easy and so good. I crave this stuff. I save the leftovers of my home made white bread in the freezer and when I have enough I make this. The best part is that I almost always have what I need on hand, so I can whip it up for guests or just for an easy snack whenever.

The more I think about this recipe, the more I dislike it. I'm not sure what I missed, everyone else on the site seemed to love this, but I just couldn't get into it. I would change a lot if I were to make this again, so much so that it wouldn't even be close to the original recipe. But I did eat it.

Flourless Chocolate Cake II

This was like eating the richest goeyiest fudgiest brownie EVER! I made it for valentines dinner and my man couldn't wait for me to serve it, he just dug right in after dinner. I hate semisweet chocolate so I used Hershey's Special Dark baking chocolate. Best decision I could have made. It didn't taste like crappy chocolate chips (yuck!). It tasted like something you'd get at a fancy restaurant. A good pan and good oven are important to this type of recipe, but I had neither and lost the middle of the cake (it stuck to the pan), but I blame it on the bad pan and not so great oven I was stuck with. Extra grease on the pan next time and maybe 2 or 3 more minutes baking.

Melt-In-Your-Mouth Short Ribs

I usually only try recipes that have been reviewed many times and have a good average rating. But, when I saw this recipe I knew I would love it. I was not put off by 2 out of 4 people that did not like it. Neither should you be. If you like the taste of meat cooked in beer (which is a little bit different, if you've never had it you may not expect what it will taste like) you will love this recipe. There is only one thing I would change (very small) in the whole thing: Chop up a couple of shallots and saute them with the garlic in a very small amount of oil or butter before you add them to the slow cooker. The shallots give it that extra umph and browning the garlic a little bit improves the flavor of the entire dish. Also, make sure you choose a nice dark beer, and one that you like. You will taste it. Enjoy! Its worth it!
