Baked Sweet Potatoes with Ginger and Honey
These are the best sweet potatoes I have ever had, sweet and spicy!!!!

Chicken Enchiladas II
These enchiladas were too soggy for my taste. Definetly would use corn tortillas instead of flour. I don't thing I was a fan of all the "sauce" in it.
