Chicken and Corn Chowder

We were in need of some comfort food and this fit the bill! The flavors go really well together. I added chopped celery just because we like it. It would be really good on a cold, rainy night! I'm looking forward to the leftovers for luch!

Tuna Noodle Casserole from Scratch

We enjoyed this! I try to avoid using cream of...soup whenever I can. I used bow tie pasta instead of egg noodles. I also added extra celery and the whole onion. I had white wine in the fridge so I put a splash of it in when sauteing the veggies. I also put 1/2 cup shredded cheddar in the sauce. I'll be making this again!

Baked Ziti III

This was really good! I made it with leftover home made meat sauce. The fresh basil was really nice on this. I usually make ziti with ricotta but this is a good alternative. It seemed a bit lighter. I'll be making this again!

Delicious Ham and Potato Soup

We love this soup. The first time I made it as written. This time I used chicken stock instead of boullion and added carrots. I preferred the chicken stock as it was less salty. I'll be making this often!

Beef Barley Lentil Soup

My husband loves this soup! I made it for the third time last night! I used beef stock instead of boullion and added 2 bay leaves. I subbed small pasta for the barley as I didn't have it on hand. Very hearty, tasty soup!!

Restaurant-Style Coleslaw II

This is our go to coleslaw recipe for the dressing but I usually use the bagged salad. The dressing I used to make was much heavier, I like the lightness of this. Make it a way ahead of time so the flavors can mingle.

Hoe Cakes

These were very good! I didn't want to make a whole pan of cornbread to go with leftover Navy bean soup and I remember this recipe. I had never had a hoe cake before but it brought back childhood memories for my husband! I think they would be excellent in the morning drizzled with honey or syrup as well! I'll be making these again!

Navy Bean Soup I

This is really good. The only changes I made was to add carrots and I used ham soup base instead of chicken boullion. Next time I will wait for the last 2 hours of cooking to add the celery, carrots and ham. They got a bit mushy for my taste cooking from the begining. Can't wait to eat the leftovers!

Lemon Sauce for Salmon Patties
