Raspberry Coconut Layer Bars

Got many complements when I took them to a potluck, and only managed to actually snag a very tiny piece for myself at the last minute! Extremely sweet, but okay in very small portions (what I had was enough for me). Although good, didn't make enough of an impression on me that I would spend the time to make them again.

Cake Balls

Extremely tasty, but cumbersome to make. I had many difficulties dipping them, despite freezing the cake balls overnight before dipping. Could not get a thin covering of chocolate and used way more chocolate than the recipe states. Will make again if I can work up the inspiration to do them for special occasions.

Quick and easy recipe to make, but I thought it was rather bland. My mother quite enjoyed it though. Not a bad meal, but I doubt I'll be making it again.

Yum! Excellent as is! Carrots required a longer cooking time though, so add those before the potatoes, or cut them up into smaller pieces.

Six Spice Oatmeal Raisin Cookies

An interesting and yummy twist on normal oatmeal raisin cookies! I accidentally had to double the egg, as I was making a half recipe and didn't really look at the ingredient list until I came to "1/2 egg". Oops. They came out great anyway, and since others seem to be complaining they are too dry, maybe it was for the best in the end! I'll make these again.

Spinach Stuffed Chicken Breasts

Yum! I marinated the chicken with olive oil, lemon juice, and oregano first. I also added onion and bread crumbs to the filling mixture, and left out the bacon. Very good, though I probably wouldn't cook it for the entire hour next time.

Pasta with Roasted Butternut Squash and Sage

Excellent recipe, yum! I followed it as written except for using milk instead of cream, and adding 1/4 c. parmesan cheese. I also roasted the squash for a longer period of time so it would cook fully through. Thanks for sharing!

Curry-Style Chicken and Spinach

Excellent base recipe! I took others' suggestions and added 2X the spices right off, along with garam masala. I also used actual green onions instead of dried flakes since I had some to use up. Chopped tomatoes stirred in at the end were nice for a color contrast and to help balance out the spiciness. Served over rice. Yum!
