This soup was awesome! Hubby thought it was great. Was a little too salty for me. Probably will use low sodium broth (either chicken or beef) next time. Only had swiss (Baby Swiss) on hand and just the dried herbs. Got a little carried away with the balsalmic vinegar. Still was wonderful. Didn't have red wine on hand so I threw in a little white wine. If you get the bread nice and brown, the edges remain crunchy. Will be making this often. Best French Onion Soup we have ever had! Made this for dinner tonight. Used more shallots, as we love them. Everything else was exactly to the recipe. We loved it. Will definitely make this again!
