Just me...looking for a better recipe!
About this Cook
First off, I'm a child of God! Then...I help my husband lead our Youth Group. I'm a mom...wife...sister...daughter and have a best friend (Debbie). My husband is actually a better cook than me...but he keeps eating my productions. Most of my recipes are "teenager" approved.
My favorite things to cook
Black bean chili! Fresh Salsa! Taco Salad. Comfort food: Tuna Noodle Casserole. Gourmet meatloaf (oh my goodness it was a Food & Wine recipe and I'll find out if I can repost it here)! Pasta adventures. Chicken experimentations.
My favorite family cooking traditions
My parents are from the deep South and raised us on mostly vegetable only dinners. Thanksgiving is my favorite holiday cooking tradition. Making olive cheese balls with my mom, or my cousins..or watching my dad come up behind my mom and hug her and her batting him away with a wooden spoon..ah, those were the days! =D
My cooking triumphs
Recently, gourmet meatloaf. Teenager & neighbor approved red salsa. Creating my own black bean chili recipe (as TGIF no longer makes theirs!). Turning teens on to clam chowder in sourdough bread bowls; chicken tacos; breakfast burritoes, etc., on our annual camping trips.
My cooking tragedies
Hmmm...will have to think about that one. Maybe when my husband and I grilled chicken for some friends and charred it black...they LOVED it...we thought they were nuts. We've been best friends ever since...so maybe not a tragedy after all?

Jicama Salad with Cilantro and Lime
Unless you REALLY like cilantro, it will overpower this recipe. I used 1/2 of what it called for. I also added a large can of mandarin oranges (cut in half) and added about 1/4 cup of the mandarine orange juice instead of the lime juice.
