Cranberry Orange Loaf

Reviewed: Dec. 3, 2009
This loaf is WONDERFUL! My house smelled amazing while it was baking and we had a hard time waiting for it to cool down to try it! I doubled the recipe and actually used 4 cups of fresh berries and it turned out lovely. I also doubled the amount of orange zest, so for a double batch I used 4 tablespoons. I skipped the orange glaze and I'm glad I did - it was perfect as is. Serisouly, this is very very yummy, pretty and festive!

Chocolate Bourbon Pecan Pie

Reviewed: Nov. 23, 2009
Great pie! The amount of bourbon is perfect. I did add the choc chips to the bottom it worked out very well. I used half brown sugar and half granulated sugar for a richer flavor - I also only used a total of 3/4 cup. Very easy, very tasty and a new family fav!

Cream Cheese Frosting II

Reviewed: Jun. 22, 2009
Very, very good! Would give it 5 stars with my changes. I used 3 cups powdered sugar and 3/4 cup cocoa powder to make it a chocolate cream cheese frosting. Do not overbeat and make it at least several hours before you want to consume it or even the day before. Great taste and consistency!

Cocktail Meatballs

Reviewed: Jun. 10, 2009
FANTASTIC! I can only rate the sauce as I used Trader Joe's pre-made meatballs, which I also recommend. I added 2+ tablespoons of hot sauce to the sauce and it was amazing! These were even better the second day.

Pig Pickin' Cake

Reviewed: Jun. 10, 2009
Pretty darn good cake! I used a pineapple cake mix, two large cans of mandarin oranges (drained one can)and mashed the oranges into tiny pieces. I put my cake into a 9x13, which worked fine. For the frosting I used cheesecake flavored pudding and added 1/2 cup of chopped pecans - this is a must! It gives it really great texture and nutty sweetness. The crushed pineapple is fabulous! I accented the cake with strawberry chunks - to give a little color contrast. It got great reviews and will definitely make again - next time I will make them into cupcakes!

White Peach Sangria

Reviewed: May 11, 2009
I tripled this yummy recipe! I used 3 bottles of pinot grigio, 2 cups peach vodka, 1 cup reg vodka (100 proof!), 1 whole can frozen lemonade concentrate, 3/4 cups of sugar and tossed in peaches and strawberries. You MUST let this sit overnight - it is a different beverage if you don't and not nearly as good. I cut the sangria with fresca right before serving it. I poured the fresca into the bottom of the glass (about 1/3) and then filled the rest with sangria and fruit - so yummy! Two glasses will definitely get you quite buzzed so be careful! I sent my grandma home slurring on mother's day! :-)

Fluffy Peanut Butter Frosting

Reviewed: Jan. 12, 2009
Awesome! This was very easy to work with and tasted delicious! I put this on top of the Too Much Chocolate Cake recipe that I turned into cupcakes and topped it with mini chocolate chips. They were heavenly! Great frosting recipe. Make sure you work with room temperature butter. I used Jif PB and it was great!

Award Winning Soft Chocolate Chip Cookies

Reviewed: Jan. 6, 2009
Seriously?! This is one of the best cookie recipes out there! Highly versatile, quick and a HUGE crowd pleaser. I often split the dough in half before I add the pudding and make two completely different kinds of cookies. The wax paper is a must as is leaving the cookies on the cookie sheet to cool off. I would leave them on the cookie sheet for at least 8 minutes before taking them off. Can't wait for my next excuse to make these!!

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Nov. 23, 2008
Amazing recipe! I used pre-toasted rustic bread pieces, which saved quite a bit of time and was equally delicious. I used a full can of whole berry cranberry sauce instead of dried cranberries and was very pleased with the outcome - it provided a nice zip! Definitely double the herbs - you'll be happy you did. Instead of of turkey broth I used 1.5 cups of chicken broth, 1.5 cups chardonnay and mixed that with 1 egg. I poured that mixture of the stuffing mix and it cooked up wonderfully and was very moist and flavorful. I cooked in two caseerole dishes covered at 350 degrees and 20 minutes uncovered and it was marvelous. Everyone was in love with this recipe - I highly recommend it!
