Potato Leek Soup III
Wonderful, simple recipe! I used only 3 T of butter, 1% milk instead of cream, and multi-colored fingerling potatoes for color and variety. Will definitely use this recipe again! Thanks!

Zesty Rice 'N' Bean Casserole
Very yummy meal. This is economical as well as hearty and delicious! We used orange bell peppers because they are less acidic and brown rice for more fiber!

The Best Thai Coconut Soup
Enjoyed this but made some changes. I used light coconut milk and would definitely use the stalk of lemongrass istead of chopping it up; I didn't enjoy the chrunchy texture. I like the idea of rice, as previously mentioned. I sauteed the mushrooms in the beginning to add more flavor, used fresh garlic, and added the shrimp later because I used pre-cooked shrimp.
