Big Soft Ginger Cookies

These are definitely one of the best cookies I've had. I've made them twice now. The only thing I did differently was use blackstrap molasses instead of regular, because that was all I had. Otherwise, I followed the recipe as is. I found the dough only slightly stickier than other cookie dough recipes where you're rolling them in your hands. I didn't refrigerate the dough before-hand and it was still fine...you just have to be a little more gentle when you're rolling them. I've always loved the Archway brand molasses cookies, because they were so soft, and have been trying to find a similar recipe for a couple of years now. I've found it, although these are way better! I'm definitely adding this to my favorites, and I will definitely be making lots of these in the next couple of months...it's already a family favorite!

Almond Chicken Casserole II

This is probably the best casserole I've had in awhile. Even my hubby, who is not usually very excited about chicken LOVED it and said to add it to the permanent collection. At the recommendation of another commenter, I added carrots and put Honey Bunches of Oats on top instead of Cornflakes. Very yummy!

Chuck's Favorite Mac and Cheese

This is probably one of the best homemade mac and cheese recipes I've tried yet. I did add about 1/2 cup milk, but I think I need to add a little more...I like my leftovers to be pretty "wet." I also just added about 1/4 cup crushed crackers over the top instead of the bread crumbs and butter...it turned out great!

Banana Banana Bread

This was so yummy! Very moist and banana-y. My husband agreed that it's even better than the recipe I've been using for almost 10 years. This is now my new regular recipe!
