Pumpkin Cookies VI

These cookies are good, I just wouldn't call them cookies. They are definitely more cake/muffin like. Still good, I just wouldn't call them cookies. The only change I made was to add some pumpkin pie spice and to add bake time.

Tomato and Avocado Salad

This was good. I love avocado, and I love tomato, and the dressing compliments them well. However, it wasn't quite as flavorful as I had hoped. Also, I doubled the amount of avocado and tomato and kept the amount of dressing the same. Still way too much dressing.

Spaghetti Pizza Lasagna

This was pretty good, but nothing spectacular. I did halve the recipe, as it's just me and my husband, and it was still huge. We only ate about 1/4 of it. Should make good leftovers. I did follow the most common recommendations: layer of sauce on the bottom, cut back on the milk, extra egg, increased temp. and bake time, waiting until last 15 minutes to add cheese. I also went a little heavy on the seasonings (I get it from my husband...he's big on spices). I might make it again. My husband is a tough critic. I served it with bread and butter, cottage cheese, and salad. Very filling.

Apple Crisp III

This is delicious! I only give it 4 stars because my husband says he likes the topping to be a bit crisper (I did bake it for 50 mins). I used McIntosh apples, as they are the only apples I will buy. I also added cinnamon to the topping. That's the only thing I changed outside of the bake time. I served it with a little bit of evaporated milk poured on top. We're moving in a few days, and this was a perfect way to use up the rest of our apples. :)

Pumpkin Bread

I just made this. The only change I made was using pumpkin pie spice instead of the individual spices. I just used a regular size can of pumpkin, didn't look at how many ounces it was. Either way, this is an awesome recipe! The flavor is great, and the texture is great. The only problem I had was the middle sunk in, so I'll tweak the recipe to avoid that next time. The top also got a bit too crunchy, so next time I'll cover the pans with foil for the last 15-20 minutes of baking. Even still, this is the best pumpkin bread I've ever had (or made). It's even better than my mother-in-law's!

Soft Sugar Cookies IV

These are perfect! I accidentally slightly over-baked mine, and they're still great! I love the fact that this recipe doesn't use cream of tartar, and that you don't have to chill the dough.

Peanut Butter and Banana Smoothie

After reading the reviews on this, I just had to try this (especially since I love PB and banana sandwiches). It's very different, but very good. However, I did make some changes based on what others said. First, I froze my banana overnight. I also added 2 ice cubes and a cup of milk (regular 2%). I added a little more PB (1/4 c.), and also threw in a packet of maple and brown sugar instant oatmeal (which I can't even really taste). After only a few sips, I'm betting this will be a very filling breakfast. My only complaint is I think there's a tiny bit too much PB, so next time I'll probably just stick with the amount the recipe calls for. Great recipe!

Apple Banana Smoothie

My husband and I liked this recipe. However, we did make some changes. First, we used 3 bananas and 2 apples, omitted the OJ, and didn't measure milk. Second, the bananas weren't frozen because I hate working with frozen bananas. The apples weren't peeled (didn't see the point) and they were McIntosh (matter of personal preference, those are the only kind of apples I will buy). Due to the bananas not being frozen, we threw in some ice (didn't measure that either, just kept adding some until it was thick enough) and we also threw in some honey. The end result is yummy. I'm drinking it now. :)

Rempel Family Meatloaf

We thought this meatloaf was just okay. It was a nice change, but I think I'll probably stick with the Betty Crocker one. I did make a few changes, but I don't think they would've made that huge of a difference. I used regular bread crumbs instead of crushed crackers, and used Worcestershire sauce instead of steak sauce (matter of what I had on hand). It was quite greasy, but the bread trick probably would've helped that.

Rich Chocolate Brownies

My husband loved these. I thought they were okay. I left off the icing, so that might have a bit to do with it. I'm still looking for a brownie recipe that turns out like the box--moist and chewy, with the flakiness on top. This recipe comes close, as it has the moist and chewy bit down. I'd make them again.

Chocolate Chip Banana Muffins

These are awesome! My husband (who always seems to have something to say about the recipes I choose) and I absolutely love these! The only changes I made were subbing sour cream for the yogurt and walnuts for the chocolate chips. I bake them for 23 minutes. I usually end up with about 18 muffins, but I might make them a bit smaller than others. I don't use the liners, either. I just spray the pan with olive oil and they pop right out afterward if you run a knife along the edge.

Hamburger Soup III

I was looking for something nice and easy to make for dinner, and also something I had all the ingredients for (haven't been able to make it to grocery store lately :)). This was perfect! The thing I love about soup is it's easy to tweak it to how you like it. I took the advice of some other reviewers and added some Worcestershire sauce and some italian seasoning. I used italian seasoned stewed tomatoes as well. I also added some extra macaroni, and just used frozen peas and carrots. Doing a taste test, I think it could use a little bit more seasoning, so I'll throw some more in. I think next time I'll also add some potatoes like others did. I think that would be a great addition. Overall, great recipe!

I just made these. They're really good. Because a couple of reviewers said theirs didn't set, I just added a little extra PB and some extra oats. They turned out fine.

Zucchini Bread

I've never made zucchini bread before, and I don't think I've ever had it...so I wasn't sure what to expect. That said, I thought it was pretty good. Kind of crumbly, but otherwise good. However, my husband LOVES zucchini bread and hated this recipe. I guess I won't be making this again.
