At home in my tiny apartment for the year!
About this Cook
I'm in the midst of many new happenings!! I've only been married since July '08.. moved from the USA to the UK... am a full time student instead of a teacher for the year!! Needless to say I am quite busy, so I like to cook dishes that are pretty quick. When I have a paper to write I don't want to slave away for hours creating a meal. Plus, when I'm hungry, it's TIME to eat! But, we don't like prepared food, so I'm always starting with fresh ingredients.
My favorite things to cook
Anything new!! I love trying a new recipe ... and often the first time I've attempted the recipe it is when guests are over. So far... everything has turned out fine! I'm waiting for the fatal mistake :)
My favorite family cooking traditions
Getting together at Christmas and baking stacks of cookies!! Helping my mom get the turkey and cornbread stuffing ready for Thanksgiving.
My cooking triumphs
Cranberry bread! YUM... Roast chicken.. I've just started making them and every one has turned out juicy and delicious!
My cooking tragedies
Loaves of white bread... last summer I spent 2 months in Thailand and was given the small task of baking bread every few days. No matter how hard I tried it came out HEAVY and dull. ughh... However the oven was a bit lopsided and you couldn't tell what temperature you had it on :)

Chocolate Brittle Surprise
This disappeared so quickly I almost didn't get any!! Kids loved it, and the adults weren't shy about going back for more either. I would DEFINITELY recommend making this!

Candied Chicken Breasts
We loved this!!! The chicken turned out really tender and tasty. I did follow the idea of just coating the chicken in bread crumbs and then throwing it in the pan instead of frying it first. It was perfect. I also didn't have pineapple, so I mixed some mango chutney in with the water for a sweet yummy taste. We love spice, so I did add cayenne pepper to the bread crumbs and the sauce - it was delicious!! I sliced up baby potatoes and cooked it all together (but the potatoes need to be started earlier or they stay crunchy!). My husband immediately said, "make this the next time we have guests over!'

Tangy Shrimp and Scallops
Yum!! My husband loved this!! I added a bit of cayenne spice to give it some kick :)
