Cajun Wild Rice
Super yummy and hearty meal, and so easy to make! I was looking for a great recipe for wild rice and found it. This dish was a meal on it's own, and since had a good amount of protein, veggies, and good carbs, it's ideal as a South Beach diet phase 2 meal. I ended up not adding the cream of mushroom soup at the end-- when everything was done cooking, it already tasted so good that I didn't want to change it-- maybe next time I will try adding it. It was easy to double the recipe, and I added some Thai chili sauce in the beginning for an added kick. Looking forward to making this again-- Thanks!

Four Cheese Macaroni
This recipe was very easy to make, made enough servings for roughly 12 ppl, and had great flavor. I happened to only use sharp cheddar, monteray jack, and velveeta. I didn't melt the cheeses first, however they quickly melted when added to the hot noodles. I only added one egg, used 2 cups half & half, added a small container of sour cream, and added a buttered bread crumb top (with bacon bits!). I also included three sliced raw jalapenos (including seeds!) to the mixture before baking for an extra kick. This recipe made a ton! I had plenty to completely fill a 2 quart casserole dish plus extra. It wasn't super creamy/gooey (more like a casserole), but definitely had a good cheesiness factor. My roommate couldn't stop eating it! I definitely recommend adding the buttered bread crumb top, bacon bits, and jalepenos! Next time I may skip the egg and add more cream.
