Herb Roasted Pork Loin and Potatoes

Made exxactly as written, except I didnt have chives, so left those off the potatoes. Had a 4.18lb roast, put on a rack in a 9 x 13 pan, cooking time was perfect! Just enough drippings to make a nice gravy. Added 1 cup cold water to drippings and a beef bullion cube. Heated that stove top until cube dissolved. Mixed 1/2 cup cold water with 2 tbsp corn starch and 1/8 tsp black pepper. Slowly added this to the broth mix and constantly stired to a boil. Added just a little extra salt and pepper to gravy after to taste. Hubby gave this a "perfect 10" as a dinner, and he very rarely hands out 10's for anything. Thanks for a great recipe!

Southwestern Black Bean Stew

I made just as written, using lite sour cream. Very good for an easy meal where you probably already have most of it in your pantry! Served with the cheddar on top and sliced jalapenos. Will make again for sure!

Pumpkin Turkey Chili

This was just okay for us. I made it as stated, but then I started adding some more spices because it was just a little to "pumpkin" for me, and I was worried about my hubby not eatting it at all. I added some more chili powder, garlic powder, red pepper flakes and some smoked chipotle pepper seasoning. With the additions, it was good, but not a FAVORITE That would keep cycling in the normal rotation. Thanks though!

Excellent! I made with regular soy though, rather than thick soy. Hubby suggested maybe next time adding some shrimp to it. Will make again for sure! Thanks!

Super good! One of the very few cakes I would make again just for hubby and I! (dont like fattening cakes hanging around the house for just the 2 of us) Used coolwhip FREE, and reg pudding. Baked in 3 - 8in round cake pans for 28 minutes. Had some leftover put in a small pan and baked and we ate that night seperate from my 3 layer cake. Yummy, light, fresh and not sinful in fat/calories! Thanks!

BBQ Feta and Hot Banana Pepper Turkey Burgers

Very good and so so easy!! I have made other tukey burgers from this site and always have trouble with them sticking together. I was shocked that without any egg or breadcrumbs these stuck together perfectly! I did pour in just a little of the juice from the peppers to the meat mix, trying to up the flavor just a bit (maybe like 1/4 cup). Also, I let the meat mix sit in the fridge for about 6 hours before patting out, to really soak up flavor. Otherwise, made as is. Would make again for sure!

Chicken Fried Chicken

Very good! Used 3 giant boneless skinless breasts, and cut them into strips. I did flour the chicken, then dredged in egg and cracker mix. Added about 1 tsp of creole mix in, since w elike things hot, but really wasnt even enough to taste the creole. Will make again, maybe add more creole next time too!

Zucchini Alfredo

I made this according to direction, but just couldnt say I was a fan of the sauce, it really lacked something, hence my 3 star. So I started slowly adding to it, and ended up with something I thought was really good, hubby just thought "ok". I would give a 4 star after my changes. I ended up doubling the garlic, added quite a lot of seasoned salt and pepper, added probably about 3/4 to 1 cup of white wine, and about 1/2 cup of shredded mozzerella cheese. I would make again, more so for me, but maybe on smaller scale since its just hubby and I and he's not "real into it".

Dirt Cake I

Great recipe! Fun for the kids! Made in a terra cotta pot with my neices, they loved the idea of a dirt cake with worms too! Simple ingredients. I had bought a medoim-large flower pot, but still had enough after filling that to make a small side bowl. Next time will make with chocolate pudding! Yum!

Creamy Chicken and Wild Rice Soup

I thought this was a great soup, easy too! I used a rotissaire chicken to make it even simplier. I did take other reviews into consideration and added carrots, celery, onions, garlic and white wine. Again, I thought fantastic, my husband wasnt quite as thrilled, thought just "good". But then again, he's not a creamy soup kinda person... I will make again, but maybe not as much as a normal soup simply because of husband not being a creamy lover.

These were good - but not GREAT. I added quite a bit of pepper to liven them up, and then even a little garlic powder. Hubby said he shouldve put butter on his, but we ate them plain. I would probably stick with my other favorite mashed potato recipe on here, Garlic Mashed Potatoes Secret Recipe. Thanks!

Pan Fried Halibut Steak with Light Green Sauce

I liked it quite a bit, my husband liked it much better without the capers. I made as written, except that I couldnt find halibut so used talapia like so many reviews suggested. I would make again for sure, but we have other fish receipes that we like better, but this is still a keeper!

Fire Roasted Tomato and Feta Pasta with Shrimp

I read many reviews before making his anmd saw that alot of people felt this needed a little extra something to it. I made the sauce as was, tasted it, and agreed it needed just a little kick. I added a little extra garlic powder, several good shakes of red pepper flakes, and then doubled my fresh basil. I used double the shrimp too. I melted the feta into the sauce, to help thicken it, but felt like I lost maybe some of the feta taste this way. Next time I will try, as written, to just toss it in at the end. Overall, hubby gave a great rating, will go into the rotation. Thanks!

Grilled Hawaiian Chicken and Pineapple Sandwiches

Very good! A nice change for a summer day. Rather than traditional BBQ, to have the sweetness of this sandwhich. I made exactly as said (marinated overnight), wouldnt change a thing. Will make again for sure.

Too Much Chocolate Cake

I didnt really "try" this, just licked the spoon as was very good. I used this to with the "Satiny Chococlate Glaze" on this site - with strawberries - and sent to work with my husand. 2 hours later the cake was gone and people were following him around asking for the recipe and saying how awesome it was. Will make again for sure, and eat some myself next time too! Side note - I did use fat free sour cream and sub'd 1/2 the oil for unsweetened applesauce.
