Low-Fat Blueberry Bran Muffins

For a healthy low fat muffin you can't beat this recipe. I followed the recipe exactly. I have made these twice now and I think they are very good.

Zucchini-Chocolate Chip Muffins

There is a reason this recipe has a 5 star rating, it is great! I have made these muffins several times and I thought I should put in a rating. My son has a food allergy to milk and eggs so I had to use soy milk in place of regular and egg replacer in place of the egg. I also used regular size (dairy free) semi-sweet chocolate chips in place of the mini ones. Following the advice of other reviewers I doubled the amount of choc chips. I also cut down the amount of oil to 1/3 cup and added in 1/4 cup of applesauce. I also didn't add in the lemon juice this time and they still came out great. My 3 year old loves these muffins and so do my husband and I. Great recipe, thanks!!

Vegan Apple Carrot Muffins

For a good for you muffin that still tastes good this recipe is great. I did cut the salt down by half, add a little more applesauce and a little less oil, and replace 1/2 cup flour with whole wheat flour. They turned out great and very moist. Also an easy way to sneak in some fruit and veggies for my 3 year old. I will be making these again.

Giant Chocolate Chip Cookie

This recipe is great. My son has food allergy's to Milk and eggs so I had to use an egg replacer, dairy free butter and dairy free chocolate chips but it still turned out great. I used store bought decorative icing and this cookie tasted as good as if I bought it from the bakery. (I made 2 cookies from the recipe in 9 inch round pans.) Five Stars!!
