oops! I didn't read the recipe thru... and added 3 eggs to the dough. Turned out beautifully. Everyone at dinner was commenting on the lovely texture and crumb of the bread.

French Butter Cakes (Madeleines)

I made both the original and the chocolate version. I forgot the butter in the chocolate version and it still came out pretty good. :) Make sure you start w/ a good egg foam or you won't get the nice spongy texture. Delicious... and I finally got to use the madeleine pan I brought back from France!

Rolled Buttercream Fondant

this fondant has a great taste...even those who hate regular fondant will like the taste of this one... HOWEVER..it was very greasy and was not easy to work w/. It cracked easily... I have very mixed feelings on this one.

Creamy Dill Cucumber Toasties

this was a really good recipe, but I think the entire pkg of dressing mix it just too much! I piped this into the mini toast cups also found on this site and placed a cucumber rosette inside each one w/ a spring of fresh dill... It wowed everyone at the tea party!

Festive Prune Cake

I love this cake with coffee glaze. even my fincky 11 yr old ate it... w/o complaint. She didn't believe me that it was prunes... The recipe is great as is.. but 2nd time around I made the following changes: reduce the salt to 3/4 tsp., exchanged shortening for butter, and I boiled 1 c. prunes w/ 1 c. water and pureed it... omitting the prune juice as I didn't have any. I added 1 container of baby food prunes. I'm going to try to make a lower fat/calorie version today!

These cookies reminded me of a chocolate cinnamon cookie that I made in baking school. They are Dutch processed cocoa is a must! If they are too hard, then you cooked them too long.

Cheesy Chicken and Potato Casserole

Yum! We loved this recipe, and we have some picky eaters! I skipped the oil and used Pam to cook the chicken. I think next time I will add broccoli/cauliflower and then top with the cheese. Some nice crumbly bacon on top would be good too!
