I am 30 yrs.old, have been happily married for 12 years.We have 4 beautiful kids - 1 boy & 3 girls. We just moved to Tennessee from Florida. I feel I am just now able to "juggle" everything at once. So I am at a point in life where I want to try new things (in the kitchen) and I'm not holding back. I am so blessed. I'm a nurse/LPN, I work weekends, so I am home with the family all week. I used to look at cooking as a chore, now I enjoy and look forward to it. I just wish I had a maid to clean up my mess!!!!
My favorite things to cook
Baking- anything: bread, biscuits, desserts. I prefer to make it all from scratch. I LOVE ALLrecipes.com!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
My favorite family cooking traditions
Traditional Holiday meals. I have mastered the sweet potatoe casserole, and always get elected to make it (by both sides of the family)
My cooking triumphs
I did research and taught myself how to can. I just made 12 cans of strawberry jam, they all turned out successfully. Our new neighbors kindly put a bag of veggies on our doorstep(lots of tomatoes and peppers) I decided to make a batch of homemade spaghetti sauce. It turned out surprisingly good.
My cooking tragedies
My first loaf of bread was a brick :(

Plum Pudding
This turned out beautiful. I wasn't quite sure what baking mix was, I google'd it and got a quick recipe(add certain ratio of baking powder,soda and salt to the flour) sorry, I didn't write it down. I didn't have tapioca, so just omitted it(next time i'll put it in)but it was still excellent. I will post a pic on this pretty dessert!! Also I halved the recipe, I had 6 over-ripe plums in the fridge. I used soft butter instead of the margorine, to cut it into the dry ingredients to give it the "crumbly effect"

Bran Flax Muffins
We sub'd cranberries for the raisins. Didn't have oat bran, used quick oats instead (probably alters the nutrition a bit) but was EXCELLENT!! & replaced 1/2 flour with whole wheat flour. I have to admit, I was pleasantly surprised with this one. They are moist, the kids even love them. I freeze the muffins and stick one as needed in the microwave for 30 sec. they are delicious.

Sweet Potato Casserole II
I would say the secret to this recipe lies in the topping. Never use melted butter(only softened) so it can be cut into the mixture, So that it can be sprinkled. Otherwise it will turn out wet and doesn't spread well. I always start out with less butter than called for, you can alwasy add to. I have been making this recipe for holiday dinners for a couple years now.- just now taking the time to rate it. It realy is the best "as is" No changes needed. Thank You!!
