Crustless Spinach Quiche
I love this recipe! I make an entire pie then eat it for breakfast all week long. It's a dieter's dream--I use reduced fat cheese and cut the cheese down to a cup and a half. It's so delicious. You get protein from your eggs and cheese, and you get plenty of healthy veggies with the spinach and onion. I like to throw in a tomato or two as well for extra healthy measures. It's very filling, and the way I make it, 1/4 of the entire pie only has 250 calories!! That's a pretty big serving for 250 satisfing calories! This is definitely one of my favorite recipes--go make one now!
