Fantastic! I was half way through mixing everything when I realized all I had was soy milk (eww) it still turned out great! Super light batter with just the right crispiness--- Add yellow mustard and mmmmm!

Best Ever Banana Bread

I've made a lot of banana breads but this one takes the cake! So perfectly moist with a nice chewy crust. I followed others' advice and substituted 1/2 applesauce in place of oil, used whole wheat flour, added a little vanilla and left out the nuts--- Divine!

Grilled Gorgonzola-Basil Burgers

This was a solid recipe- good for when you want to change things up a bit. I think I just struggled with what to top my burger with....besides red onion & tomato. Mayo? Spicy mustard? My husband and I both need a sauce on our food without ruining the intended flavor or authenticity of the dish.

Cathy's Banana Bread

This is 5 stars as is-- but the second time I revised with the following: Sugar- did 1/2 brown and 1/2 white. I substituted 1/2 the sour cream with 1/2 cup of vanilla yogurt--- and since I completely forgot I was out of Vanilla extract I used almond. I've also always added a bit of cinnamon and nutmeg to my breads. These changes made it so decadently rich and wonderful--- I will never make another!!!

Salisbury Steak

I agree that the sauce wasn't so great....almost bitter tasting. I think next time I'll just make some gravy from a rioux and extra french onion soup. I also feel like the meat needs a little something more so that it doesn't just taste like a hamburger.

This was a good side dish...nothing to be excited about and it tasted a bit more like a breakfast dish then a dinner side--- very eggy but I guess one could assume that by looking at the ingredients.

Chicken Noodle Casserole I

I rated 5 stars because I thought it was fantastic and my kids did to--- I think you'll enjoy it if you grew up on Campbells chicken noodle soup--- tastes just like it! Great for kids, not necessarily the recipe you make to impress guests though.

Roasted Portobello Mushrooms with Blue Cheese

This is a very nice recipe as is, but the second time I made it I like it even more by using a couple splashes of worshestire sauce instead of soy sauce...it really pairs with the "meaty" taste of this dish. I also spread on some garlic salt over the top of the mushroom before adding the cheese. Next time I will follow a few other reviews and add some sauteed red bell pepper on top. You MUST like blue cheese for this recipe....please don't rate recipes low if a food listed in the NAME of the recipe is one you don't like!!!

Chewy Red Raspberry Squares

I think this is a great recipe to hold on to when you need to fix a treat with ingredients on hand. I thought they were good--- a little too sweet for me and I would have liked to have tasted the oats a bit more. I may play with some variations of the "doses" of the ingredients in this recipe next time.

This turned out great-- I halved the butter and used applesauce in it's place. The density of this bread makes it great toasted and almost as good as those recipes that call for 2 sticks of butter!

Low-Fat Blueberry Bran Muffins

These are excellent for a low-fat muffin. My husband usually refuses my "low-fat" baked recipes, but these were a hit in his book. The only change I made was to add cut up peaches instead of blueberries as I had peaches to use. Will try the blueberries next time.

Mexican Baked Fish

What a great and EASY recipe....we love fish tacos and this was the speedy version. I used a little less cheese and topped with baked chips to lighten the recipe up a bit. Topped with cilantro for a little extra something at the end and served with Spanish Rice--- this will definitely be a staple in my household!

Pumpkin Loaf

I have made this three times now--- and I think I have it down. I only gave it 4 stars but think a few minor adjustments make it 5. I followed a few other suggestions and added about 1/3 cup applesauce and did one whole egg/one egg yolk in order to really make this super moist and dense...less cake-like. I also added a little more sugar, more cinnamon and added a kick of nutmeg. De-lish--- My husband, 3 year old and I polished it off in less than 24 hours :)
