I'm not your typical cook. I only cook as a hobby. I listen to punk rock and metal when I cook. It zones me. I have tattoos and piercings and when I don't cook I go to punk shows. I tend to be "rough around the edges" sometimes. Don't get offended by me cause you shouldn't always take me seriously. Pesto and goat cheese stuffed chicken breasts. Roasted lamb chops, hoity toity mac and cheese, fish... Old school cooking. Enchiladas should not be baked and enchilada "casseroles" are a bastardization of a perfect dish. If it aint broke, don't fix it. I'm my own worst critic so I dunno yet. Out of all things, I have a hard time with rice...
