Ian's Potato-Vegetable Soup

Reduced the salt to one TEAspoon and the soup was GREAT! Very rich and creamy and full of flavor. Tasted a little like chicken pot pie, only better.

Spinach and Feta Pita Bake

Very delicious! Next time I will chop the spinach first, add it to the tomato-feta-mushroom mixture, mix with olive oil and THEN put the veggies on the pita! Keeps the veggies (especially spinach) from drying out in the oven).

African Peanut Soup

Delicious! I freeze all the juices from the canned tomatoes, beans, corn, legumes, etc. and use those as veggie stock. I also used Smuckers Natural Peanut Butter. The brown rice needs a lot longer cooking time, however, or you could try leftover brown rice.

Beef Tips and Noodles

Everyone liked this and I'd make it again. I browned the meat before tossing it into the dish. Also, cover it while it's baking, otherwise the tips can get a little dry. Warning: watch the sodium level in the dry soup mix. It could easily get too salty.

Lentil Soup

Very delicious! Instead of the crushed tomatoes, I used 1 (28oz) can of Hunts Diced tomatoes with Basil, Garlic & Oregano plus 1 (14.5 oz) can of DelMonte petite cut diced tomatoes with Garlic & Olive Oil. Instead of 7 c chic broth, I used 6 c chic broth with about 1 c of College Inn Chicken Broth with Roasted Vegetables. I think these additions made a substantial difference in the taste of the soup due to the additional spices and flavors.

Tofu Parmigiana

My family liked this better than I did. I patted the tofu dry after slicing it, froze it, dipped it in egg and seasoned breadcrumbs, fried it in olive oil, then layered with the sauce and cheese as per the recipe. It's a keeper.

Very good. Next time, fry the tofu in oil first, then proceed with the recipe. Otherwise the tofu is slimy and mushy.

Creamy Parsnip With Ginger Soup

By happy accident, I splashed some Oyster Sauce into my bowl of parsnip soup - it made a good soup even better! Add to taste, as I have no way of knowing how much I splashed into my bowl and how that would translate to the whole recipe.

Easy Swedish Apple Pie

SURPRISE! This is easy and delicious. I used a bottom crust and instead of cutting and fluting it, I folded the draped pastry up and over some of the Swedish 'crust', making almost a giant dumpling. It baked beautifully with the pastry crust keeping the apple juices inside. I added a little brown sugar mixed into the apples and used ground clove sparingly in the Swedish crust. The only other change I would make is to use about 1/2 tsp. of almond extract, if any. One tsp. was too much.
