Zucchini Brownies

My sister-in-law shared this recipe with me, so I had to try it for myself. Wow! They are wonderful. We added 1 cup of chocolate chips instead of the frosting and they were just as good. Thanks for sharing!

Cornish Game Hens with Garlic and Rosemary

Perfect Christmas Eve dinner! I added a bit of chicken broth to the garlic when baking to prevent it from burning as others suggested. We served them with asparagus and sweet potato fries. Very yummy!

Baby Back Ribs

We LOVED these! I did a dry rub: paprika, brown sugar, white sugar, chili powder, salt. I marinated it for 30 minutes while I preheated the oven to 300. Sprayed the foil, then wrapped them and baked for 2 hours. Took them out of the foil, then covered with sauce for 20 more minutes. I then broiled them as others had suggested for 7 minutes. Yum! We didn't need any additional dipping sauce, like I usually do at restaurants. We will be using this again. Thanks!!

Russian Mushroom and Potato Soup

I can't go grocery shopping without my husband asking me to make this dish! soo yummy. Just wonderful as is! Our first time using leeks, and the flavor is great. We also used oyster mushrooms, but the regular white or portabellos are good too.

BBQ Pork for Sandwiches

The sauce is the key in this dish. I tried used Kraft Hickory and it was gross. Next time I'll make sure I pick something of more quality. I did mine on low for 9 hours, then in the oven for 15 on 350. The roast came out wonderfully, and you could even skip the oven step. I didn't add the BBQ until then, so I wanted the flavors to meld some more. Super easy. Thanks!

Grilled Tilapia with Mango Salsa

Awesome! My husband wants us to add it to the family recipes. I served it over brown rice with grilled veggies. We placed the fish in aluminum foil packets, but i wouldn't recommend this method, as it was difficult to peel off. I would also make sure you use a small jalepeno, as the salsa came out a little hot for our taste. Wonderful recipe though. Thanks!

Polenta with Spicy Sausage-Veggie Sauce

I used to make something very similar to this that I got out of an Italian mafia cookbook. I baked it as a casserole. I would prepare the polenta, then spread it on the bottom of a 9X13 plan and refridgerate it until it firmed up. Then, spread the cooked sausage filling on top and finish with more polenta on top of that and of course lots of cheese! The top browns in the oven and it is sooooooooo yummy. I can't tell you how many compliments I receive on it. For even more cheeziness, layer provolone slices between. Scrumptous!
