Easy Shake and Bake Chicken
I followed other members' hints and baked leg quarters in a pan with cooking spray, added some powdered onion, garlic and parmesan. The result was great! The skin was cricpy thin, the flavor was satisfying, the meat was juicy. Now I'll have to try it with skinless chicken.

Cranberry Muffins
I followed modifications, suggested by others. The muffins where easy to prepare, but unimpressive in flavor. I'm not sure if I want to bake them again.

Pesto, Goat Cheese, and Sun-dried Tomatoes Quiche
I loved this quiche. My family, though found the taste of goat cheese overpowering. I baked it in regular pie crust and deep dish (with increae in ingredients, of course). And I used 1% milk. Worked well.
