Chickpeas in Tomato Sauce With Feta and Wine

This is now one of my favorite meals! I added a bit of cooked chicken I had left over, but that was it. My mom didn't care for it, but that's only because she doesn't like feta. Thanks!

Lemon Cream Pasta with Chicken

At last! A recipe that can be reduced easily to feed two people! Very akin to alfredo; in fact, I could barely taste the difference. I accidentally used rigatoni pasta and used evap. milk instead of cream. As another reviewer pointed out, the noodles did stick to the pan, but that's not a huge deal for me. I will use this recipe instead of alfredo now! Thanks for posting!

Rice with Goodies

My mom declared this to be one of her favorite meals after I made it this afternoon! To make it a little healthier, I substituted brown rice for the white and omitted the bacon. I did use leftover Christmas turkey for this. I'll definitely be making it again soon!

Carrie's Artichoke and Sun-dried Tomato Pasta

May I say... interesting? I think this could be great. I followed the recipe exactly (except for leaving out the mushrooms and substituting egg noodles for fettuccine, as that's what I had), and it definitely has room for improvement. Next time, I will replace fresh tomatoes for the sun-dried, will add mozzarella to the sauce, and will leave out the parmesan. Thanks, but it needs adjusting.

Tropical Salad with Pineapple Vinaigrette

This was soooooo good! I always improvise on this salad, adding whatever veggies I have on hand (i.e. carrots, tomatoes, green pepper, broccoli, etc.), and I don't usually use bacon bits. I love it!

Pumpkin, Sweet Potato, and Leek Soup

Sorry, but this was quite bland. It may have been partly my fault for possibly adding too much pumpkin and forgetting to put in the bay leaf until the last few minutes, but it was still pretty bad. We had to throw out the leftovers. : (

Onions Baked with Rosemary and Cream

These were pretty good; however, after half an onion, they got a little old. I used evaporate milk instead of cream. I may or may not make them again.
