I am SAHM Army wife-so I have lived all around the world. We have recently moved back to the USA after living in Japan for 6 years.
I have 2 children. One will eat anything and one will almost nothing!
I love to decorate my house and I spent all summer landscaping our yard. I am also my kid's #1 fan at all their sporting events!
My favorite things to cook
I am called the Casserole Queen in our house. I love the simplicity of casseroles. I am also trying to use my slow cooker more. I am from Oklahoma and we eat a lot of beef (I am from a stockyard town-that means super fresh and cheap beef!). I love anything with beef but I am trying to cook more with chicken and would LOVE to add more fish (so would my fish loving husband!). Using this great website, I have found 2 new chicken recipes that even my picky son loves! And, I love to bake. I live in Apple Country, so I have been baking with apples this fall. Again, I have found several incredible recipes at Allrecipes!
My favorite family cooking traditions
Most of the traditions (like many families) are centered around Christmas. I make a great breakfast casserole and rum cake. This year, we are going to make my mother-in-law's bon-bons. She passed away before I could learn to make her bon-bons. I can't wait to make this our family tradition.
My cooking triumphs
My once a month cooking class that I taught to Japanese housewives. It was great fun. The fun was trying new things (for them and sometimes me!), putting together themed menus and being with fun Japanese ladies. I can only thing of one real diaster (a tropical dessert that had a spicy element-thai chili sauce). The fun thing was finding great recipes and then hoping that I could get the ingredients needed at my commissary (military supermarket). I was not always successful and then I had to become creative! We cooked corned beef and soda bread, all American BBQ, traditional Thanksgiving dinner, but the best for a autumn menu that used root and autumn vegetables. It was delicious! There were so many menus that is hard to remember them all.
My cooking tragedies
My husband lovingly calls it Poop pie. I tried to make a real from scratch pumpkin pie from fresh pumpkin. Did you realize that fresh pumpkin can be stringy and for some reason (once cooked) isn't orange. Hence the name Poop Pie.
