Swiss Cheese 'n' Onion Quiche

Delicious! I layered the onions, then some diced ham, then the cheese. I also mixed in about 1/2 cup of thawed frozen chopped spinach in with the egg mixture before pouring on top. There didn't seem to be enough liquid so I added another egg mixed with about 1/4 cup of milk and poured that on. Had to bake it about 10 minutes longer because of the addition. I also substituted heavy cream and milk for the 1/2 & 1/2 since I didn't have any. Will be making it again exactly the same!

Krystal's Perfect Marinade for BBQ or Grilled Chicken

SO DELICIOUS! Even got a "Wow!" out of my husband. Took 5 frozen chicken breasts and put them in a big zip loc with the marinade and stuck in a bowl of warm water to defrost. 2 hours later, grilled on my stove (on grill pan, we were out of propane!) and the chicken was moist and "wow" quality. The key is to grill on low heat to retain the juices. This is a simple and quick recipe I will make again and again. Served with spicy vegetable chow mein and hawaiian rolls.

Grilled Lemon Chicken

I used this marinade for a whole cut up chicken (skin & bones included) and let it marinate 45 mins to an hour... and grilled it on the bbq. Not a lot of flavor. I'm wondering if I needed to marinate it longer because the bone was still in?? I'll try this again for boneless breasts, it sure smelled good before it was cooked!

Thai Peanut Chicken

I accidentally added an extra tablespoon of peanut butter, which is why the sauce tasted way too peanutty. I halved the cayenne for my kids, but next time would up it a bit because I couldn't taste any spice at all. This was pretty bland but I'll make it again and try cutting the pb and adding more cayenne. Also, I added fresh garlic, but just used ginger powder since that's all I had on hand. I will also add a bit of sugar like someone else suggested, I think this dish could use a little sweetness...or maybe a twist of fresh o.j.???

The Best Veggie Sandwich

I grew up eating a version of this... We would layer english muffin, mashed avocado, sliced tomato, sliced mushrooms, sprouts, and thick slice of sharp cheddar cheese on top. You also have to salt & pepper before broiling or toasting. These are really good, and you must add the mushrooms because they add a special flavor (I'm not usually a big fan of them either). The ranch dressing isn't necessary to make this sandwich delicious, the other flavors are perfect.

Playgroup Granola Bars

Wow! These are seriously good. I will be making these a lot because my 1 and 3 year old ate them up and my husband loved them too. They taste like an oatmeal cookie, but even better. I loved the consistency. I followed everything pretty much right on, except I did half raisins / half cranberries. I really liked mixture of sweet and tart and will prob do that again. 30 minutes is way too long to bake and you do need to watch to make sure the edges are not too brown. I had to cut away part of the bars that were overdone. Yum!!

Big Soft Ginger Cookies

These have a good flavor and texture. I used unsalted butter in place of the margarine and increased the salt a bit. Next time I might add more cinnamon & cloves, but they're great as is. Would also be good for ice cream sandwiches!

Mom's Zucchini Bread

Very good! I did make some modifications that others suggested. Only used 2 cups sugar (and used 1/2 white and 1/2 brown), sub. half of oil with applesauce, and added 2 1/2 cups zucchinni without squeezing the excess moisture out. I ended up with 12 regular size muffins and 6 jumbo muffins and baked them all at 325 for 20 to 30 minutes or so. Great recipe!

Zucchini Patties

Very good...We had them for dinner and dipped them in marinara sauce. Would make a great appetizer too. My almost 1 year old liked them surprisingly, and my 3 year old ate them up! Like others, I substituted 1/4 c. seasoned bread crumbs for 1/4 c. of the flour, and added a clove of minced fresh garlic and pepper. I got impatient waiting for the zucchini to dry out in the collander and just squeezed it by hand instead. I fried the patties in olive oil instead of vegetable for flavor and flattened them out a bit in the pan as they were cooking. I ended up with 7 and it was just enough for me and my 2 kids :) I'll double it next time if my husband is eating too! Oh, and next time I'd try adding some diced mushrooms to the mixture.

Lime Chicken Soft Tacos

I put everything in a crock pot and cooked on high, it was done in just over an hour. I shredded chicken at the end to serve in tacos and it was so good! I omitted the oregano as others noted, and added cumin. Served with fresh cilantro, cheese, sour cream, lettuce, avocado and hot sauce of course! This will become a regular meal in our house.

Authentic Louisiana Red Beans and Rice

I followed others' advice and doubled the cajun spice amount. I couldn't find andouille sausage, so I got louisiana hot links, and the beans turned out way too spicy. Our noses were running! Next time I will double the cajun spice, but add a more mild sausage. I also added 2 tsp. salt and it really needed this. It would have been way too bland without salt. We made burritos the next day with the beans and they were so good! I might make this recipe again just to make burritos.

Pizza Dough III

I've only attempted to make pizza dough a couple of times, but this was the best! Better than any pizzeria I've bought dough from and I couldn't believe how well it turned out. I ended up using close to 3 cups of flour, otherwise it would have been too sticky like other reviewers said. I just used all-purpose, not bread flour. I let mine rise a little over an hour and it at least doubled in size. I sprinkled a little cornmeal on my pizza stone first and poked holes all over the dough with a fork. I baked it at 400 for 10 mins, then added my toppings and baked another 10 or so. Perfect thick crust...chewy with a little crisp. This is a keeper.
