Irresistible Irish Soda Bread
Made this exactly as written and it was great. Very easy to mix up and bake in the loaf pan. Wonderful texture and moist. The butter and buttermilk made it very rich and it was not too sweet. I keep going back for another slice!

Lemon Lu Lu Cake
I made this cake for my mom's birthday today as she likes lemony desserts. Following some of the suggestions, I used 1/3 cup applesauce for the oil and only 2 cups confectioner's sugar and 1 cup freshly squeezed lemon juice for the icing. The cake was moist with a very pronounced lemon flavor (just what I was wanting). It was easy to make and my mom loved it. The next time I want a lemon dessert, I'll turn to this recipe.

Seminary Muffins
Tried these yesterday as I was looking for a quick recipe to use up bananas and applesauce. Only made a couple of changes: used 1/2 C. white flour and 1/2 C. whole wheat flour, left out the chocolate chips ( I LOVE chocolate but hubby's tummy doesn't handle it well), and increased the nuts to 1 C. Everyone said they were very good - very moist (not gummy) and tasty. I needed the full 20 minutes baking time. I will be making these again.
