Pineapple Enchiladas

This is an excellent, simple recipe. I used a high-quality white cheddar cheese and you could tell the good cheese really made this recipe stand out. I think I might add some chopped ham next time I make it - kind of like a Hawaiian pizza.

Turkey Tetrazzini II

High rating for the simple, easy, great tasting comfort food. Some said this was kind of plain, but I think that is what makes it a comfort food. I make it often for the Rescue Mission and those men probably don't want a bunch of different stuff in their food anyway. I usually use home made chicken stock, so I have to add quite a bit of salt for all that pasta (even with the Parmesan). I used smoked turkey (and smoked turkey stock) and it is awesome that way. I've sometimes added liquid smoke flavoring which is good too. Sure, it would be good with a can of baby peas, some mushrooms, garlic, shallots (would be great!), who knows, maybe even some cooked, sliced bacon. But, the simplicity of this recipe is one of the things that makes it so attractive. Next time I might try cooking for a shorter time as others have suggested, so that it is more soupy.

Rosie's Bok Choy Salad

5 Stars on Flavor, but 3 stars on preparation (in my opinion). To me, there was at least twice as much dressing as needed. Lucky for me I was using Bok Choy from the garden, so I went and picked another head. I used 2 large heads. My recommendation, in case you don't agree with me is to make this per the recipe, but start by only adding half the dressing and see what you think. For a variation, try seasoned rice vinegar instead of wine vinegar (I think its better this way). Also really good with part seasoned rice vinegar and part spicy South American pineapple vinegar.

Rubbed and Grilled Pork Loin

This is a really good recipe. Lots of people have their rub mixtures - this one is superior. I brined a 4 lb pork loin for 1 1/2 hours (in the fridge) then put the rub on and let it sit out for 30 min to get to room temp. I basted it right at the end with the "Rice Vinegar Basting Sauce" recipe from this site. Can't tell you about the cooking time because I ran out of gas right at the end and had to finish in the oven. My wife said it was the best pork I ever made. I did a few boneless chicken breasts exactly the same way (shorter cooking time, of course) for my guests who don't eat pork. These were also great.

Rice Vinegar Basting Sauce

Great Basting Sauce. I followed the recipe exactly (except I doubled it). I used it as a final baste on the "Rubbed and Grilled Pork Loin" recipe from this site. Just be careful it will burn fast on the grill with all that sugar. With all that ginger, it definitely puts an Asian twist to the flavor - so make sure that is what you want. Only negatives, its high in salt and sugar, but I don't think there is anything wrong with us low carb eaters enjoying this once in a while.

Bake Sale Lemon Bars

I made this recipe exactly as written and it turned out great. I had no trouble spreading the crust out as some people noted. I used real, salted butter. I wonder if some people used tub margarine or something. I have had mixed results in the past when I baked with margarine.

Creamy Black Bean Dip

I made the recipe exactly as written and it is excellent. Just the right amount of tang. You might want to double it - makes a small batch. The second time I made it I put in 1/2 cup shredded cheddar cheese and 1/2 cup sour cream. It took away from the tang a little bit, but made the recipe a little larger.

Sausage Jalapeno Poppers

These are a great appetizer. As the recipe reads, they will come out greasy and take a lot longer in the oven than stated. Save yourself a lot of work: Par cook 5 slices of bacon at a time for 3 1/2 minutes in the microwave. Cut each pice of par-cooked bacon in half. Lay a half slice of bacon on top of each prepared jalapeno. Cook in oven until bacon is browned to your liking. The jalapenos will still be crunchy. No messing with toothpicks and much of the bacon grease will be eliminated. Also good stuffed with plain shredded mozzarella instead of the cream cheese mixture. I will post a picture of some made this way.

Soft Onion Sandwich Rolls

Not a bad idea. I thought the dough had too much onion in it and it overpowered everything. I want to have the yeasty taste of the bread also. I would recommend cutting the amount of onion powder and minced onions in half.

Kimchi Jun (Kimchi Pancake) and Dipping Sauce

These are a great way to enjoy Kimchi for all of us Kimchi lovers out there. The second time I made it I used whole wheat flour and added the salt into the batter, as well as some baking powder to make them rise a little bit like regular pancakes. Great along side stir fry.

Cumin Turkey Burgers

This is a good concept but waaay too much spices. I want to be able to taste the flavor of the turkey in the burger. I could only taste the spices. Next time I make these I will reduce the 'dry' spices by half and also halve the soy and Worcestershire sauces.

Mexican Pinto Beans

They're beans! They are supposed to be somewhat bland - they are a side dish to compliment the other items in your meal. This is not a soup recipe. The only thing I change is when adding the water the second time - add one whole beer. Any beer, but a medium ale is really good. Not all beans taste good cooked with beer, but I think it really makes pinto's great. Another trick, you can try covering and cooking them in a 350 degree oven instead of the stove top. For some reason, the all around heat makes the texture better than the stove top.

Southern Burgers

These are just average. They are meatloaf burgers not really hamburgers. Even the great American chef James Beard's favorite hamburger recipe is a meatloaf burger. Anytime you add this much stuff to the meat it becomes meatloaf. Mine also did not stick together, but I thawed the meat in the microwave. To make them stick together better, try using fresh - never frozen - hamburger. Or, at least, don't thaw the meat in the microwave.

Healthy Banana Cookies

These are great healthy cookies. I can't believe the reviews that say they don't have any flavor. How can anything with bananas and dates in it not have any flavor? I did add 1/2 tsp of cinnamon and 1/2 tsp of freshly ground nutmeg the second time I made them. But the first time, they were fine without the spices. Do put 1/2 to 1 tsp salt in - anything with this much oatmeal needs salt.
