Downeast Maine Pumpkin Bread
Delicious! I took the advice of another user and reduced the sugar from 3 cups to just 2 cups and used 1/2 cup vegetable oil and 1/2 cup unsweetened applesauce. It was a HUGE hit! I like my bread to be more like bread and less like cake - not super sweet, just sweet enough - and this really hit the spot! If you have the opportunity to bake this in a convection oven, keep the temp at 350 but bring the bake time down to about 30 minutes. Mine was done in just less than 30, so if you choose to use convection, check it at about 25 minutes w/ a toothpick. I can't believe it cut my baking time in half! Overall, it was fabulous! I will DEFINITELY make again!!!
