Mom's Delicious Oyster Corn Bread Dressing

Reviewed: Dec. 26, 2009
I really enjoyed this! Since I had never tried oysters in dressing before, and I didn't know if everyone coming to dinner would appreciate them, I only used one can. Everything else combined beautifully, and my guests enjoyed this. The inclusion of mashed sweet potato was a nice surprise.

The Best Seafood Stuffed Mushrooms

Reviewed: Dec. 26, 2009
I wish I could give these 4.5 stars! I saw no need for the egg yolk, so omitted it. My Christmas crowd enjoyed these, and I would make them again with a few changes--I think some parmesan mixed in would add a little something extra, and fresh chopped parsley would give nice color and flavor also. This did make much more filling than you need for 12 mushrooms--it would probably easily fill 24. Thanks for sharing the recipe!

Alaska Salmon Bake with Pecan Crunch Coating

Reviewed: Dec. 26, 2009
Delicious, we love this recipe. Even my 7 year old who REFUSES to eat salmon will eat this (I do give her extra sauce). Served it for Christmas to a happy crowd.

Fabulous, we loved this with salmon. Will make many more times, didn't change anything.

Pollo Mediterranean

Reviewed: Oct. 13, 2009
This was recommended on the Recipe Exchange (tab at the top) and I liked the flavors. I had to substitute capers for the olives, but they have a similar briny flavor. I did not serve it over pasta or rice to save the carbs. Adding an extra splash of white wine at the end really makes it special!

Apple Crisp II

Reviewed: Oct. 13, 2009
This is Fall dessert Heaven! I forgot to add the water, and it turned out just fine. The topping was "crisp"-y, and almost like a crumbled oatmeal cookie. Fabulous & easy, will make again soon!

Rosemary Shortbread Cookies

Yum! These are a great change from a typical shortbread, as the rosemary adds a nice flavor, and would be fabulous for a tea party. Will definitely make these again!

My family enjoyed this recipe--we did not use all of the bacon, cheese, and dressing the recipe calls for, but you can't go wrong with the flavors here!

Baked Zucchini Chips

Reviewed: Sep. 29, 2009
Great! I only had panko bread crumbs, so used those seasoned with a garlic spice mix and extra parmesan and they turned out nice & crunchy. My family loved these, and our 7 year old proclaimed them to be the BEST way to eat zucchini!

Orange Pecan French Toast

This was wonderful as written--I added a bit more zest due to preference. It was easy to put together the night before it was baked, and smelled divine! I will definitely make this again!

Farmer's Market Vegetarian Quesadillas

Reviewed: Jul. 10, 2009
I submitted this recipe, and you can use any vegetable you like--adding eggplant, spinach, or black beans also works well. Have fun using the fresh ingredients your family enjoys! This recipe makes 6 servings out of the 3 quesadillas. You can use reduced carb tortillas also, and more cheese, but this was created to be a healthy recipe ; ).

Yum! This was really good, and super easy. I did add some crumbled feta to the top as well as some chopped chives for color. I'll make this again!

Easy Batter Fruit Cobbler

Reviewed: Apr. 21, 2009
This was so easy, and I had all of the ingredients. I did use whole wheat flour instead of regular, a 12 oz. bag of frozen dark sweet pitted cherries (thawed and drained), and sprinkled with some coarse turbinado sugar. Also reduced the butter to 3 tbsp and it was plenty. It turned out beautifully, and was very tasty! I look forward to trying it with different fruits.

Jelly Bean Nests

Reviewed: Apr. 11, 2009
This is such a cute Spring recipe. My daughter & I made these for Easter, and used Runts freckled eggs instead of jelly beans. Because some complained about the lack of taste, I added some cinnamon to the marshmallow mixture before tossing in the noodles and that added a nice flavor. These are great, and not too sweet when all the other Easter candy is available!

I didn't have sesame seeds, but had everything else, and these were DELICIOUS! My husband and daughter loved them so much with our Asian meal last night. I'll make these again soon!

Cherry Cheese Pie I

This is so easy! I used 1/3 fat cream cheese, light whipped topping, and mini graham cracker crusts for individual servings, topped with thawed frozen strawberries in light syrup. We really enjoyed it, thanks!

Potato Soup IV

Reviewed: Mar. 1, 2009
I am rating this recipe based solely on the content--I made it exactly as written. It is an excellent base recipe, but a little bland without some additions. I did garnish with real bacon bits before serving. Next time, I will add some more seasoning components: bacon in the soup, green onion, and maybe some garlic. A really good start to what could be a 5 star knockout recipe!

Peanut Butter and Jelly Thumbprint Shortbread Cookies

Reviewed: Feb. 4, 2009
Loved these. Not only are they quick and easy, but they are not overly sweet. My daughter was excited to help with these, especially since she loves PB&J. We used strawberry rhubarb preserves, and did not add the vegetable oil to the peanut butter. If it's heated, it becomes easy enough to drizzle without the oil. Thanks for a fun, great recipe! *Here's a tip to get them to look like my photo--Instead of using my thumb to make the indentation, I use a 1/4 or 1/2 teaspoon measuring spoon. Press it in the center, and you'll get a perfect spot to place your jam or jelly.

Absolutely Fabulous Greek/House Dressing

Reviewed: Jan. 14, 2009
This was very good, but I do agree with the other reviewers who used equal amounts of olive oil and vinegar. I'm glad I followed that tip because I believe as written the amount of vinegar would have been too overpowering. All in all it was a good dressing.

Quick Black Forest Cake

Reviewed: Jan. 11, 2009
This cake was verrrrry sweet, and I left off the glaze. My daughter & I made it together (she's 6) so baking it together was easy & quick. If we make it again, we will not add chocolate chips, as I think that's what made it too sweet for us.
