Mom's Dill Potato Salad

Mmmm, mmmm! This is delicious! I must admit, I did use fresh herbs (dill & chives) because my garden is growing, and I like to use it ; ). I'll definitely make this again, thanks for sharing your recipe!

Southern-Style Barbecue Sauce

This is really, really good, and I like the fact that the sugar has been reduced from what the normal sauce would have. It's wonderfully tangy, and could compete at any Southern backyard barbecue! Great with chicken!

Summer Pasta Salad I

I could see why this would be a crowd favorite at potlucks, but it was a bit too sweet for us (I anticipated that due to the extra sugar plus Catalina dressing). I do recommend making it the night before as the directions state, and it is extremely visually appealing. While I wouldn't consider this my go-to Summer pasta salad, it is a nice change from mayo based salads. Thanks for sharing your recipe!

Spring Veggie Bagel Sandwich

My daughter asked for these for her lunchbox, which means it's a winner! We grow our own radishes and arugula, and will have our own tomatoes later this Summer, so this is a perfect way to use our garden for a quick and healthy meal. We prefer the thin bagels over regular, and pictured is a whole wheat version. The cream cheese mixture has a subtle but savory flavor, and combined with the spiciness of the radishes and arugula, it's a definite treat. I'll make these often when my garden grows! Thanks!

Amy's Cilantro Cream Sauce

I can't believe I've never rated this! It's been on hand so many times in our house over the years, and we love it. It's excellent on beef or chicken tacos, with tortilla chips, and my husband likes to slather it on black beans, tossed salad, and anything else he deems to be worthy of it. This sauce is delicious, and perfect as written. Thanks to Amy!

Soft Mahi Mahi Tacos with Ginger-Lime Dressing

I loved the freshness of this recipe, and the ginger-lime dressing adds an incredible depth of flavor to the salsa. Next time, I would add chopped red pepper and red onion to the salsa for more color and flavor. The only change I made was to use soft white corn tortillas, which we prefer. Thanks for a unique and fun recipe!

Corn and Black Bean Guacamole

OLE! This is a wonderful guacamole that could be used as a side dish to any Mexican feast (like we did!). I love the colors and the fact that it's FULL of vegetables, and even my 10 year old ate it happily. 10 stars!! Thanks for sharing your recipe!

Fiesta Corn Tortilla Pizzas

My family LOVED these and they are so easy to put together! I did use chives instead of green onions because I have an herb explosion in my backyard right now--including cilantro! These are perfect for a quick Cinco de Mayo party, and so simple to do you can throw a party in minutes ; ). We ate ours with sour cream and taco sauce. Thanks Lucylove!

Cheesecake Crepe Roll-Ups

This is the first time I've ever made crepes and they turned out wonderfully. I used fresh fruit since it's in season and the filled crepes are delicious. I would be very happy if my family made these for me for Mother's Day (hint, hint!). Thanks for sharing this recipe.

Baked-Bottom Nanaimo Bars

My daughter & I made this recipe in a tart pan and it turned out beautifully. I don't think I would want to try eating it out of hand due to the pudding making it extremely messy. It was yummy, and we would make it again! My daughter even said it was 'better than some cupcakes' she had eaten. Thanks for an easy recipe--I'd make it as a tart again ; ) *I did toast the coconut prior to sprinkling it over the top.

Roasted Broccoli & Crispy Polenta with Roasted Pepper & Asiago Chicken Sausage

Yummmm! This is a delicious dish that reminds me of our Southern 'shrimp & grits' (without the sauce) in a unique way. I prepared my own polenta so that made the cooking time much longer, but prepared polenta would be a breeze and help you stay within the 15 minute & dinner's ready timeframe. My husband enjoyed it and so did I. This is the third recipe I've made using al fresco chicken sausage and I have been extremely impressed with their quality and the flavors are out of this world! Please check my photos for the other 2 recipes, they are worth your time. Thanks al fresco, you've added a lifelong customer!

Inca Red Quinoa Salad with Sweet Apple Chicken Sausage

Don't be confused, the recipe is not accurate since there is no Dijon mustard listed in the ingredient list, but it's in the description and directions. HOWEVER, this salad is to die for. I normally do not use that phrase, but it truly is a phenomenal creation. All of the ingredients are fresh and natural, including the sausage. This was one of my first experiences cooking with al fresco chicken sausage, but it will not be my last! I could eat something like this every day for lunch, especially in the heat of Spring or Summer. The flavors are bright with some sweetness from the honey, and my family really enjoyed it. Although not as much as I did! I'll be sure to save this in my Family Favorites recipe box so I can make it again. *One tip--red quinoa can be hard to find, I happened to have some on hand. I easily found some tri-color quinoa which consisted of black, red, and regular. I'm not sure this recipe would be as good with plain quinoa due to the softer texture it has when cooked. Red is heartier, which is why it works so well in this salad.

Pizza Alfredo with Roasted Vegetables

My family LOVED this pizza. I asked them to rate it, and my husband gave it 10 stars (always bucking the system, the choice was from 1 to 5). It was easy to put together, easy cleanup if you line your pan with foil, and delicious. We will make this again in the future, and I look forward to trying more al fresco recipes!

Fiber One® Chocolate-Peanut Butter Haystacks

We liked these! I'm not sure how I would feel about eating more than one at a time, but it was nice to finish a weekday meal with this treat. I do wish Fiber One was more natural and didn't have aspartame. With a recipe like this, a completely natural fiber cereal would really be transformed into something sweet and better than a regular cookie or candy. This recipe does make cute bird's nests!

Cranberry Pot Roast by Michelle

This is a good, easy recipe. I used a can of whole berry cranberry sauce, and would have liked more horseradish for the kick it could give, because I almost couldn't taste it. I'm not sure that I would call this a "go-to" recipe for my next roast, but it was tasty.

This was definitely spicy for our taste but it was approved to try again so this recipe gets a solid 4 stars. I could see the paste complementing any firm fish such as salmon and I think it would also be good on shrimp. Thanks for sharing your recipe!

Greek Fettuccine

I really like the simplicity of this recipe, and look forward to making a version of it again this Spring & Summer when my tomato plants are producing and I have more mint in the garden. I used a can of fire roasted diced tomatoes this time, and it turned out okay. I think it needs more flavor though--maybe some oregano. I added chicken to my husband's plate to make it heartier for him, but my daughter & I liked it without.

Ham Pineapple Sandwiches

I love the concept of this sandwich because my family likes ham and pineapple together. As written, the cream cheese pineapple mixture is waaaay too sweet, and I didn't add the full cup of sugar (I just couldn't do it). I would make it again, but would decrease the sugar by half or more. My 9 year old loved it though, but it was because it tasted so sweet.
