My favorite things to cook
My absolute favorite recipes are clones from restaurants--it's so much fun to have people ask "did you really make this?" I also enjoy pastas, vegetable dishes, and creating lower fat, healthier recipes from those that aren't so healthy.
My favorite family cooking traditions
Every year for my husband's birthday, I bake his favorite cheesecake, and my daughter gets her favorite birthday cake (it changes every year). At Christmas, I love baking biscotti for gifts and myself; ).
My cooking triumphs
Each Christmas I host dinner for my family, and it's the one time during the year that I get to cook everything for them! I plan the menu for weeks-having a successful meal is the highlight of my year. Also, every New Year's Eve, I host a dinner for friends, and they get so excited about being invited--it's great to know that I can cook something they enjoy so much!

Lots of Chocolate Cherry Cookies
I'm the recipe submitter, and directions should read to drop the dough by tablespoonfuls onto the cookie sheets. I like to use a cookie scoop to make them uniform, and can get approximately 24 cookies per batch. You can use either dark chocolate cocoa powder for a richer color (like in my photo) or regular cocoa is just as delicious and will result in a lighter brown cookie.

Peanut Butter and Jelly Oatmeal Pancakes
Exactly as written, the batter turns out very runny (I made a test pancake, which turned out flat--even for a pancake). I added about 1/4 cup of ground golden flaxseed and allowed the batter to sit for 15 minutes and that firmed it enough. I topped them with warm strawberry-rhubarb jam. My daughters loved them, and I'll make them again with the flaxseed. Finely diced peanuts would also be a good addition and would help boost the peanut flavor.

Little Broccoli Bites
These were great and toddler-approved. They don't scream "You're eating broccoli" and they're portable (in fact, my oldest daughter wants them in her lunchbox). Be sure your broccoli is drained well. I simplified the preparation by chopping everything together in my food processor, scooping balls of the "dough" with a cookie scoop, and placing on the baking sheet. I did bake them longer than stated, for approximately 25 minutes. I look forward to making these again and adding different ingredients to get a variety of flavors: Spinach & feta, red pepper & goat cheese, and adding red pepper to the original recipe would be perfect for Christmas! These would also be good with some added garlic. Thanks for a fun, versatile recipe!
