Pumpkin Black Bean Soup
As suggested, I made this soup the night before it was served. It was very easy to assemble and very aromatic. I used rice vinegar (simply because I had no sherry vinegar and) and I believe THAT and the pumpkin were what made this soup so different and wonderful. Left out the ham, personal choice, but tore up some fresh semolina bread for "dunking". It was a big hit in my family and we'll be making this again soon.

Sour Cream Burgers
These burgers were moist, flavorful and easy to prepare; however, they were SO moist they fell apart. Next time I make this recipe (yes, it's saved to my faovrites), I'll cut the sour cream to 1/2 cup and prepare them ahead of time. All-in-all, the kids enjoyed them so it's all good to me.

Chicken Marsala
Doubled everything to feed our small crowd and it was gobbled up in no time. Having grown up with Dad preparing this meal (a NYC fireman, need I say more?) I never quite learned how to duplicate his amazing rendition . . . this recipe comes darn close. Got lots of compliments and reqeusts to put this in our list of "must haves". 5 stars for sure!
