I am a former pipe-fitter/plumber with twenty years in the trade. Unfortunately, I was injured (low back), having surgery and subsequently disabled. Currently, I am a full-time student working on a degree in theology with the aspiration to attend seminary when I'm done with this BA degree. My wife works full-time for the state of NC and I am a stay at home dad with nine children, ages 21 to 2, six girls and three boys. Soon, the only boy left in our home will be getting his own place, leaving me behind with a wife and four girls, ages 10 to 2. I will be living in "chick-flick" hell. :) Due to the situation, I have started doing all the cooking for the evening meal. I'm learning and actually enjoying myself!
My favorite things to cook
Pork Loin, slow cooked in a crock pot; Oven baked turkey; homemade chicken pot pie.
My favorite family cooking traditions
I am from the south and I love southern fried chicken, fresh butter beans, collards, etc. I am also a huge fan of Asian stir-fry using a Wok. Chicken or pork fried rice and beef and broccoli are several of my favorite dishes.
My cooking triumphs
I recently made a home made chicken pot pie where I made the top and bottom crust from scratch. I didn't think I could do it but I somehow pulled it off and my family devoured it, which is the gauge for all my cooking.
My cooking tragedies
The first time I cooked fried chicken it absolutely beautiful on the outside but it was cold and raw just beneath that wonderful golden brown skin.

Slow Cooker London Broil
This recipe is perfect just the way it is. It's by far the easiest and best (for the effort) crock pot London Broil recipe I've used. My family truly loved it and it took so little effort but tasted awesome! I will use this one over and over again!

Simple Beef Stroganoff
I've only recently started cooking around the house since my wife went back to school. This site has been my best friend with great recipes-- this one is no exception. I added the Hidden Valley Ranch Mix as suggested by one reviewer and also added an onion and a jar of mushrooms. I used milk in the Cream of Mushroom soup rather than water which gave the dish an overall creamier consistency. The only thing I will change the next time I fix it is that I will decrease the amount of garlic powder. It gave it a bit too much of a garlic taste for my liking. Otherwise, this is a great dish and I will definitely enjoy cooking it again!
