Alienated Blueberry Muffins

Fantastic! Half of the flour I used was whole wheat for added fiber, and I accidentally doubled the blueberries to four cups. Really moist and sweet. Loved them. I'll make them exactly the same way next time.

Quick and Easy Chicken and Rice

All three picky kids loved it. I'd give it 4.5 stars if possible. I used brown rice. It was a bit dry because the brown rice soaks up so much liquid. Also, the bullion cubes didn't completely dissolve in the sauce. Next time I'll use 2 cups of brown rice and I'll soak the bullion cubes in hot water before adding it to the butter/sauce mixture. I might throw some broccoli too. There will definitely be a next time, though.

Jan's Fresh Blueberry Pie

My husband, a blueberry pie fan, thought it was so-so. My son thanked me for making "a brilliant pie." I thought it was quite good, but not great. Certainly an easy recipe, and I like that the berries remain fresh as opposed to cooked and mushy. Since we have blueberries coming out our ears, I was pleased to have something tasty and easy to make.

Halibut with Rice Wine

This was hit with the whole family, even with my picky 6 year old. I sauteed the fish instead of grilling because it was raining. I doubled the amount of sauce and served it on the side dishes of rice and green beans. I'll definitely make it again, and next time I'll grill the fish.

Simply the Easiest Beef Brisket

This brisket is the recipe the family demands for special occasions. I've made it a half dozen times. I've substituted onion soup for onion and omitted the sugar once, but it tastes best following the basic directions. I use the slow cooker on low all day. Serve the sauce with egg noodles. An easy meal that's a crowd favorite! I've made it in the oven too but found that the cooking time was WAAAY too long.
