Easy Pumpkin Muffins

It's funny that the reviews that say something is wrong with the recipe changed it before trying it the way it was written. It does work without adding oil or eggs or anything else. I love that there is a lot of pumpkin it it - I did the calculations based on the nutrition info on the can of pumpkin, and each muffin has over 75% of the RDA of vitamin A! How's that for sneaking something healthy into your diet? My son is allergic to eggs, so this is a fabulous recipe to have in my file.

Buttermilk Cinnamon Rolls

Oh. My. Gosh. These are AMAZING! I put homemade cream cheese frosting on them about 30 minutes after they came out of the oven, and my husband, a big fan of Cinnabon, said that they're even better than Cinnabon! I used 1 c bread flour along with 3-1/2 c AP flour, and I used the overnight method...I cannot go on enough about how absolutely fantastic these were...and I chuckle about the review that said it was awful...well, if you put in 8 c of flour, then of course it will be awful - the recipe calls for 4-1/2!

These were good, but could have used a little more oomph. I think next time, I'll make them with sausage instead of ground beef, or maybe 1/2 and 1/2...but they were still good though.

Coconut Cranberry Bars

YUM!!! My husband said that these are his new all-time-favorite cookies. They are super easy, and really good. I left out the nuts because my son is allergic to nuts, but I think that the nuts would make them even more irresistible!

It's Chili by George!!

This was a good recipe...but we prefer it with some tweaks: next time, I'll double the onion and add some garlic, and decrease the chili powder, and eliminate the cayenne. (I've got young kids and it was too much spice for them)

World's Best Lasagna

I've been cooking for years, and my husband has never liked any lasagna I've made...until I tried this recipe on him...it's the only recipe that comes close to his mom's, which he loves...When I make this, I double the recipe but make it in 4 8x8 pans, and freeze 3 of them...It freezes beautifully, and it's a one-dish meal that's great to have for a busy day.

Slow Cooker Baked Beans

Neither my husband nor I cared for this recipe.. In our opinion, they needed something other than sweetness - maybe some vinegar or mustard, and MUCH less molasses...the molasses imparted a bitter taste. Definitely won't be making this again - sorry.

I cannot even imagine howsome reviewers didn't LOVE this! It's awesome. It's really not a cake though - it's almost like a strussel-topped crumble, not a cake....but that's just the name.

No-Fuss Cinnamon Cheesecake

The reason I made this was that my son is allergic to eggs and nuts, and I needed a make-ahead dessert because I was having guests coming right when I got home from working a full day...I loved how easy this recipe was, and how inexpensive the ingredients were. I got rave reviews - people were talking about it and asking for the recipe for days afterward. I did make 2 small changes - the amount of butter on the top seemed to be way too much, so I decreased it by half - and did the same to the cinnamon/sugar top - decreased it by about 1/4. I also think that a great adaptation would be to use 1/2 of the cream cheese filling and 1/2 of the butter/sugar topping and it would be a great brunch item - it tastes very similar to a cheese danish.

Apple Bran Muffins

These are slight on the tough/spongy side, but that comes with the lack of eggs. My little guy is allergic to eggs, so I bake without eggs a lot, and considering they're eggless, these are not bad at all. In fact, my olders son said these are his favorite muffins.

Applesauce Cake III

I tried this recipe because I was looking for cakes that my 22-month old son can also enjoy. Being allergic to eggs and nuts, it can be hard to find cakles that are safe for him. It's good, but nothing special...I'm not a huge fan of molasses, and the molasses flavor comes through quite strongly.

Best Cream Of Broccoli Soup

YUM! I had a pound of frozen broccoli in the freezer and was looking for something to do with it, so I made this, and it it delicious, and SO healthy! I love that it calls for milk, not cream, and no cheese.

Sweet-Potato Muffins

The batter is really dry and I thought I messed it up, but these muffins baked up beautifully. They were very hearty and delicious, and I love the nutritional value of so much sweet potato in the recipe.

Roasted Lemon Chicken

This was fantastic! My whole family loved it. I used the meat and bones to make homemade chicken soup with homemade stock, and the rosemary/lemon flavor was even evident in the soup. Mmmm!
