Raspberry Ribbons

These are fantastic! Not only delicious, but also very pretty! My hubby suggested drizzling them with melted white chcolate instead of the glaze, which sounds yommy - maybe next time, I'll try that.

a great recipe, but slightly bland. I think some added sauteed onions might make it tastier, but all in all, still a good recipe. The flavor of the potatoes really shines.

Toffee Caramel Squares

These are really yummy and pretty easy to make. You have to be careful to make the bottom layer really even and make sure it's on an even surface when pouring the caramel topping on...Mine ended up with thick caramel in some places, and hardly any caramel in others...but that's easily avoidable if you're move careful than I was. Also, my son is allergic to eggs, so this is a great egg-free cookie!

Lighter Fettuccini Alfredo

Oh my gosh, this is yummy! I LOVE fettuccini alfredo, but I can count on one hand the number of times I've eaten it due to it being SO bad for you. This is a great lighter version, and I doesn't taste light! I did find the sauce to be a tad thick, but an exptra splash of milk would easily solve that problem. We added some veggies to the sauce for added nutrition and bulk, and it was fabulous - my 19-month old gobbled it up too, veggies and all!

Cream Cheese Blueberry Pie

I used about 1 Tbsp of lemon juice and otherwise followed the recipe. It was fantastic! My whole family loved it, and my brother and hubby fought over the last piece...which would have been my brother's 3rd piece that day, and my hubby's second!

Maple Dill Carrots

My hubby, who told me he hates glazed carrots LOVED these. My 3-year old ate some, and he's not big on carrots, and my 13-month old shoveled them in so fast I thought he was going to choke! YUM YUM YUM...The best part is that they're made with ingredients I always have on hand. I'm definitely making these again!

Glazed Meatloaf II

My hubby loves his mom's meatloaf and hates when I even attempt meatloaf because it's never as good at his mom's...but this time, my little boy asked for meatloaf for dinner, so I found this recipe and made it, and both my little boy and the "big boy" loved it! I did make a change though - I sauteed the onions prior to mixing them into the loaf, and I also added 1 carrot (I made a 1/2 recipe though, so 2 carrots for the full recipe), shredded and sauteed (with the onions). The only reason I added the carrot was to sneak in some extra nutrition/fiber and to stretch the pound of ground beef a little further. It was a big hit!

Baked Chicken Nuggets

YUM - I left the recipe out for my hubby to make while I was out, and from what he said, it was easy to make. My 3-year-old liked them as well. One change we made: We used crushed oyster crackers in place of breadcrumbs because we were out of breadcrumbs - they turned out great.

Andrea's Pasta Fagioli

ok...way too much pasta, in my opinion - it was more like a pasta dish with broth and a few beans. To me, pasta fagioli should have more beans and more broth, and not so much pasta. The flavor was good, but next time I'll cut the pasta in 1/2. Also, it makes a TON of soup.

Lentil Soup

Great, but I do make some changes. I use chicken stock in place of water, and I leave out the vinegar. My 3-year-old picky eater loves this soup, and it's one of my hubby's favorites, plus it's really heathy and cheap.

My Best Clam Chowder

Unbelievable Rolls

Really good - slightly sweet, soft. I made them smaller than the recipe calls for - made a batch of about 50, and used them for mini cheeseburgers at an appetizer party. I made them ahead of time - they freeze well.
