Cream Cheese Frosting II
I used this icing on a red velvet cake I made for my class and it was pretty good. The problem with it is there is much too much sugar in this recipe. I used 3 cups instead of 4, and I still had students scraping it off the cake because they said it was too sweet. I think with only two cups of sugar it would be fantastic.

Split Pea Soup with Rosemary
I left out the leeks, but other than that I followed the recipe exactly. The boyfriend said it was better than his mom's, so I call this a big win.

Baked Salmon with Coconut Crust
The salmon tasted good, but I wasn't thrilled with the texture. It was too much bread crumb and not enough coconut and it didn't stick very well to the fish. I'll lay off the bread crumbs next time.
