Chicken Enchiladas I
Good basic recipe. BUT if your looking for fast and easy, try buying frozen Burritos or Tiquitos, they are mild in flavor, but it cuts down on the cooking time. Also use red enchilada sauce (small can)and large can of tomato sauce. Mix together and pour 1/3 into bottom of pan, prevents burning. Add burritos and cook uncovered 10 min. add the rest of sauce and 2 cups favorite cheese,Tex-Mex , Cheddar or Colby mix. Be sure the sauce covers everything and cook 10-15 min. more, or cheese is melted. If you like the beans add before sauce or heat and serve as a side.

Filet Mignon with Rich Balsamic Glaze
I made this last night. The steak was moist and tender, very good. The sauce was not our taste, took over every other flavor. The vinegar was too strong. Next time I'll just make a beef broth glaze.
