I take care of my ninety-one-year-old Dad and he needs a specialized diet with low sodium restrictions. I have found all kinds of recipies that I can use to fill him up that require no additional salt. He also suffers from Gout so I avoid shellfish, organ meats and other triggers for that. He gets bored with the stuff he has to eat all the time, so finding this site is a real treasure!
My favorite things to cook
Cioppino, Tater Tot Casserole, Chicken Breast casseroles, Turkey Casseroles, Alfredo sauce recipies, Polenta, Kraut Burgers, Egg Rolls, All kinds of different salads, Fried Chicken Breast w/onions. Meatloaf, Italian dishes of all kinds, anything I can find that Dad can have.

My mother used to cook Cioppino. We have it about once a year.
Mom made Kraut burgers with fresh bread dough, sausage and cabbage. It is awesome.
Homemade candies to give at Christmas time.
Egg Rolls
Potato Soup with clams and shrivels. Shrivels are basic noodle dough dropped into a stew or soup and cooked until they are done. They are alot like dumplings and they have an awesome taste.
Kidney Bean Stew
Beef Stew with Veggies
Split Pea Soup, Beans and Cornbread, Rib-eye Steak!
My cooking triumphs
Dad no longer has to be on Lasix (a water removing medication that is hard on his kidneys) because I have learned how to cook as salt free and fat free as possible. His Cholesterol levels are at 155. Mine are higher cause I snack a lot. LOL
My cooking tragedies
I was making carmel corn for christmas one year and the phone rang right at the point where I was getting ready to add the vanilla and the baking soda. When I returned to the stove, I added the vanilla and baking soda twice I guess because the caramel ran all over the burners, and basically exploded all over the kitchen. I had to wash everything including the walls down. My advice is to not answer the phone if you are in the middle of making something like that.
