Eggplant -- Easy, Good and Tasty
I picked a fresh organic eggplant and tomatoes from my garden. My hubby refused to eat it (meat and tatters man) but i convinced him to just try one bite and he really liked it. I didn't have any bread to make crumbs so I used wheat crackers and it was fine. I left the skin on because when I was in Italy this summer that's the way they served their eggplant. I went with someone's suggestion of putting garlic in the egg and parmesan cheese in the crumbs. I will make this again. Thank you Lotting123 for the recipe and Wanda for the lovely picture!

Chili I
Excellent! The beer is a must and don't worry about the alcohol...it will evaporate while it cooks in just a few minutes. The last 5 minutes of cooking I added 1/2 chopped cilantro and the juice of 1 fresh lime. I served it with Chili Fritos brand corn chips, shredded chedder cheese, and a dollop of sour cream. My family and guests loved it!

Big Soft Ginger Cookies
Don't cha just love AllRecipes.com? YES!!! I agree guys and gals this recipe is a keeper. I made 3 batches for Christmas give-aways and everyone loved them. I took some to my Dad, who is in a nursing home, on Christmas day and he just couldn't get enough and was amazed that they were so soft.
