I've leved in Delta township, just outside of Lansing, Mi for alsmost 20 yrs. I'm married to Rich 30yrs this November! We have 4 children- Erin- 26, who is Married to tim and expecting their first child (a boy!) June 23rd, Molly- 24, who is married to Andy and has a darling little girl, Kiara who is 2. We also have a son Sean, who is 21 and attending college in Chicago, and Kelly who is 17 and a jr in high school. I am a RN and work fulltime at Ingham Regional Medical Center. I come from a large family- 5 kids, where family time was centered around Sunday dinners. My mom was a stay at home mom and self taught cook, who was always trying something new. Her piecrusts were the best! I love baking during the holidays.
My favorite things to cook
Pasta dishes, sauteed or roasted vegtables, any kind of desserts except piecrusts (I cna't begin to duplicate my Mom's!)

Apple Walnut Salad with Cranberry Vinaigrette
I love the combination of fruit and nuts in a salad and wanted to use some apples up. Our neighbors invited us over for dinner aand said they were having pork so I thought this would be a perfect combination. It was a big hit. I forgot the onion though! Added dried cherries. Would add blue or gorgonzola cheese next time.

Chicken with Garlic, Basil, and Parsley
I made this this past Sunday. I'm a proscrastinator, so was running low on time when I got started and decided to make it as per the original recipe, though would use fresh herbs the next time. I did brown the chicken first and altered the baking time. It was very flavorful. McCormick has grinder style herbs now which I love so I used the Italian Seasoning grinder instead of all the separate herbs. Since there was just three of us for dinner, I had plenty for Chicken Ceaser Salad yesterday. I warmed the leftover chicken on my grill pan sprayed with evoo( rather than truning it into rubber in the microwave) before adding it to the salad. My family enjoyed it.

Slow-Cooked Country Ribs in Gravy
I tried this a couple of days ago and My husband, picky daughter and I enjoyed it. I alos substituted brown suggar, and added chili sauce when I discovered I had ran out of ketchup. Also added a little garlic powder. I prefer flour for thickening, so I used it instead of cornstardh or tapioca. I meet spice it up a bit more next time- maybe a little horsradish and a dash of hot sauce.
