A neighbor gave us a bag of fresh picked carrots and we had no idea what to do with so many. I wanted the recipe that used the most amount of carrots. Needless to say, we came across this recipe and the carrots are now gone! We made this cake about 4 times. A neighbor even requested this as a birthday cake, wich they loved! The cake itself came out very moist with a great texture. I did change the sugar for one cup of brown sugar and one cup of white sugar, i added an extra teaspoon of vanilla extract, and omitted the pecans because i didn't have any in hand. This recipe is a keeper!
