French Toast I

I have made french toast for years but it was never as good as this. I omitted the salt & upped the eggs to 4 and milk to 3/4 cup to make 11-12 slices. 5 year old twins & 2 year old gobbled it up, even my husband raved about how good this was.

Pork Tenderloin with Dijon Marsala Sauce

This was a test for me. I haven't been cooking very long. I was surprised how easy was. It turned out fantastic. My in-laws came over, don't eat or drink anything with alcohol taste. They loved it. Even had 2nd helpings. My husband wants me to make it again. I did add mushroom, a dash of thyme & some minced garlic, as someone suggested. Did it when added the shallots. The sauce tasted great. This will go on the menu for family & friends.

Really loved this, I think I will tone down the pepper but I loved it. It was easy and fast. It is also a recipe that I can adapt to my taste buds easily.

Fabulous Fruit Salad II

Absolutely wonderful. The cinnamon made it irresistible I served this in individual dishes at a semi-formal dinner. It looked beautiful and tasted even better. I ended up using 1/2 strawberry and 1/2 vanilla yogurt. Everyone loved it. My husband had me make another batch the next day.

Green Beans Amandine

Served these at a semi-formal dinner. Everyone loved them. I steamed the green beans instead of boiling them. I also used olive oil instead of butter to make them non-dairy. Next time I will use butter.

Chicken Mexicala

I used shredded chicken, didn't fry the tortillas, added some garlic powder, chili powder, salt and pepper. I took the advice of one review to add cheese to the first layer. My husband loved it and so did my 2 year old daughter. I cut back on the onion but that was the most overpowering taste in the recipe. I know I will make it again but will cut down on the onions. Whenever I buy a precooked whole chicken; I shred the leftover chicken. I always make something with it the next night like tacos, casseroles or soups. This was a great recipe because I always have the ingredients on hand.

Perfect Turkey

This was the best turkey I ever made and with the turkey juices we had the best stuffing every. Will use this recipe every year. Used Fresh Turkey (3% savior seasoning) & just shy of 3 cups of salt (did rub lightly the outside of the turkey), boiled brine, iced it down. Filled the cooler (large lidded cooler)with a 20 lb bag of ice and water to cover the turkey overnight. Everything else was by the recipe.
