Curried Hummus
This was my first time making hummus and I kind of winged it. I made a few changes to the recipe so this isn't quite a fair review. First, I was almost out of curry powder so I used 1t curry and 2t cumin (too much cumin even though i love it). Also i followed other user's suggestions and used 1/4c liquid from the beans which was perfect. Anymore liquid would have been too much. Really different, and good though. I'll try it again!!

Vegetarian Tortilla Soup
SOOO good! I would have given it the full 5 stars but it was way too spicy (and I only added a 7 ounce can of green chilis). I would recommend one 4 ounce can of green chilis and about 2 -2 1/2 T of cumin. I also crushed up some tortilla chips and added them at the very end because I like my tortilla soup to be thick. I topped it with lime, cheese and sour cream (to help with the spiciness).

Cilantro Tomato Corn Salad
It was a good base but not amazing. I felt like there was too much butter but that may just be my personal taste. I also added lemon juice. I will make it again but alter it a bit...but I think that is the point. I ended up mixing it into the pasta and zucchini that I had made and it was really good like that. It's a great start for a fun side dish that can be altered as needed.
