Spinach Rice Casserole
Yummy! I tried this recipe one night when I had a rice craving and I was not disappointed. The only problem is the cooking time is a bit long.

Spinach Lentil Soup
Very delicious. I've never had lentils before and this was a great way to try them for the first time. The soup keeps well as well, as it kept for me in the fridge for a week. The only problem I had with it was that the flavors weren't as strong as I would have liked them to be so I had to experiment with it until it was perfect. Other than that, great soup!

Double Peanut Butter Cake
I was looking for something different to make my son and I found this recipe. It sounded delicious so I decided to try it. Let me tell you I was not disappointed at all! The cake turned out a little dense. I'm not sure if that is how it's supposed to be, but it actually made the cake better so I cannot complain. The flavors weren't too strong and since it was dense the texture was lovely. The icing was delicious as well and added that sweet touch that complimented the cake very nicely. The only thing I changed was I added spices to the cake batter. Other than that I made it as is and it was very good. Thank you for sharing this recipe, I will definitely make this again.
