Country Pineapple Casserole

I only used 1/2 the amt. of lemon juice and I added some cut up ham. It took 3 times as long to cook as I had to use a cassarole dish to bake it in. Everyone who tasted it said they loved it. Would even be good for breakfast brunch as it resembles baked french toast.

Golden Sweet Cornbread

The best!! Doesn't look like it's done coming out of the oven, so don't be deceived and let it cook to long. Wonderful taste and texture. Crumbly,but not too much. It did not stay on the plate long! Yummy.

Crab and Lobster Stuffed Mushrooms

very good but a little bland. added some salt,pepper and parm cheese to the mix. also cooked it longer, the mushrooms are not sufficiently cooked in 12min. needed more like 25min in the oven. overall they were all gone in minutes.

Overnight French Toast II

Very good but took longer to cook than stated. was still a little mushy in center after 55 min. didnt want it to burn. will try next time just setting up 1-2 hours as opposed to overnight. I added cinnamon as well per others suggestions.

My husband and I loved it. It was way to big for 2 people so I gave most of it away, everyone raved about it, however I will use a cream cheese frosting next time I make it. YUM!

Easy Quiche

made this last night as a try out for a xmas potluck. Very good. nice flavor makes a large batch. I think it would have overflowed in the oven in a 10 inch pie pan. I used a lg casserole dish. Also used fresh broccli (steamed 1st). Will make again. YUM!

Creamy Split Pea Soup

Yummy. I made this over thanksgiving weekend. Much better to make it 1 day in advance, as the flavor is better the next day (as it is with many recipes). Will be making this soup again through the winter. It did not last long enough for everyone.

Sausage-Stuffed Eggplant

I made this tonight for dinner. Excellent. I only doubled the recipe. I never liked eggplant really. I made for my husband who is a big fan of eggplant, But I have to say I ate every bit of it! However it is a very heavy dish, I served pasta on the side with the extra sauce, but it was too much.This eggplant dish is fine with a salad alone. I will make it again for many years to come. YUM!

Pasta Fagioli Soup

Made a few changes based on what others had to say, 1st I sauted small onion and some finely chopped celery and carrot at the begining. I added an extra can of chicken broth as well. Used crumbled sausage (excellent)instead of bacon only because I didnt have any. I also added oregano and fresh and dried parsley. Also, just as a general note: Never add pasta directly to any recipe to cook. Cook pasta separately then add to dish. This soup was wonderful. Very hearty, will make again through the winter.
